The other day, I visited Kunimori and the Sake Culture Museum in Handa. This is a limited edition sake sold at the museum. I really have a weakness for limited edition sake. I just can't resist 😅. When I first drank it, it had the freshness of arabashiri, but I felt the taste was not coherent. After 4 days of drinking one cup every day, it has changed. It has become one team and has transformed into a mellow and delicious sake. I'm not sure what to make of it, but I'm sure I'll be able to find a way to make it work.

This sake was released last month as a limited edition at the kurabiraki event. The main label is a hiyaoroshi of the standard Isun Heki Yume-Ginko. However, although the label is hiyaoroshi, it is actually an unfiltered draft of hiyaoroshi. It seems that it was specially released at Kurabiraki to compare it with hiyaoroshi. The taste is fresh, but it has been aged over the summer, so it may be a bit mellowed out. It has a rounded flavor and is delicious. It has a rounded flavor and is delicious.

This is the first hiyaoroshi I drank at home this year. It is a special pure sake, but has a subtle ginjo taste. It has a delicious flavor that goes beyond one summer. The moderate acidity and bitterness are irresistible. As expected of Aizu sake, it is delicious. It is delicious.

I participated in the Manami Kaido Ultra Walking on September 16 and 17. I wanted to try this at least once. They were particular about the number 777 to make the most of the Asahi rice. This sake is brewed with 77% polished rice and No. 7 yeast. 🌾. It is fresh and a little sweet, but has a strong flavor that is typical of a sake brewed with a traditional sake yeast. 😋

I went to Chōgatake (蝶ヶ岳) in the Northern Alps, even though there was a typhoon coming the day before yesterday and yesterday, I stared at the weather map and thought I could go. Chōgatake (🌋) I didn't have the best view, but I'm happy that I was able to climb the mountain without being exposed to rain and wind. I'll be back soon 🙏. I have not been able to upload this article due to a number of things going on. Today is Yume-Ginko DREAM from Yamazaki brewery. The label features the Asagimadara, a butterfly known to cross the sea, and the concept is to cross the sea with sake brewed with rice and water from Aichi Prefecture. 🦋 It is not flashy but has a discreet ginjo aroma, fruity. There is plenty of umami. It is a daiginjo, but it is also reasonably priced. It's a good choice.

I was able to drink it again this year. Active nigori. I think it's one of the best 3 sake I drank last year for me. 😋. I talked to the brewer of Mikotsuru at the Nagano sake event and he said that this year's active nigori was less fizzy because there were requests to enjoy it for 2 or 3 days. 🎶 It certainly didn't jump when the bottle was opened. However, when you drink it, you can feel the schwash and it has a good balance of umami, sweetness, and acidity. 3 days later, the schwash settles down and the sake is full of umami. This year's active nigori is definitely delicious. It is a very good sake.

I cooled it down well and it spilled a little, although it did not erupt. It is very energetic. After 10 minutes of opening and closing the gap, it finally settled down. 😌 Slight firing of the raw yeast, this is a first for me. 🎶 The fine bubbles are pleasant when poured into the glass. It retains the solid flavor typical of the traditional sake, but with a bouncy, effervescent feeling, and a nice sharpness that makes it easy to drink. It's a very good sake. I really like it. On 8/12, Asahi no Hi fair was held at the brewery of Asahi no Hi. About 10 kinds of sake and keg sake were served. It was very hot outside, but inside the brewery was cool and the sake was delicious. It was delicious! There were lots of snacks and it was a fun summer fair. 🎶 I bought this sake then. It's a rich sake with lots of flavor because it's a jusui brew. It's not explosive, but it's also a bit fizzy and modern for a classic Asahi. 😋😋.

I drank at Bon Festival, Shinshu Kamerei, which I haven't drunk at home in a very long time. In 2016, when I was doing the Taiga Sanadamaru, I stopped by Ueda Castle and Okazaki Sake Brewery. At that time I could usually buy it at the brewery. The following year, I bought it at a liquor store at Nagano station on my way back from the Nagano Marathon. I go to Nagano every year, but I don't see it anymore, it really has become a premier sake. It's really become a premium sake 😭 Well, I haven't had Kamerei in a while, but it's still delicious. It has a gorgeous ginjo aroma, just the right amount of sweetness when you drink it, a clear crispness, and a clear sake quality. I'm not sure what to expect 😋😋.

Purchased at Sakae Sake Square, an event in Nagoya last month. It is the first sake made from start to finish by Mr. Sanekazu, an apprentice toji. This is the second time I have met Jitsuwa-san, and the first time was in the spring when I went to a screening of a documentary film about her work as a brewer. I was impressed by her small stature, but she does all the heavy lifting with aplomb and is passionate about sake brewing. 🎥 The sake is really delicious, retaining the firm, heavy taste of Senpyo, but wrapped in a feminine and gentle obliviousness. The label is also super cute and handmade. I'm sure you'll love it 😀 . I can't wait to see what kind of sake Jitsuwa will come up with in the future. I'm looking forward to seeing more 😋😋.

I found the birthplace at a liquor store and bought it immediately. 🤞 I was caught off guard. It flew as soon as I opened the bottle. ✈️ (Safe to say the contents are safe) This is an adult juice. I drank it over 3 days. It transformed from fresh and naughty at first to a calm and balanced drink of flavor, acidity and bitterness on the third day. I'm not sure what to make of it 😋😋.

7/21 I went to the Uehara Sake Brewery's first drinking session again this year. 35 different kinds of sake were judged seriously. I know I have a silly tongue, but I hope it helps (lol). The 3rd and 4th pictures are from that time. Soma no Tengu was purchased that day. It is a little light and firm among the Buroisen. The light nigori draft is irresistible. I'm not sure if I've ever had it before 😋😋.

The other day, when my son was in Tokyo, he sent me a picture of him and his daughter, who lives in Tokyo, having a saki drink with his siblings. The drink at that time was Icebreaker. I was so excited. I wanted to drink it myself, so I went to the liquor store and bought some. 3 years ago I used to buy it every year, but I haven't had it for a while. It's a solid Tamagawa, but for some reason this one has a freshness to it that makes it a classic summer sake. I recommend it on the rocks, but it's actually really good warmed up. I'm sure you'll enjoy it 😋😋.

Yesterday, I went to Dorikam's wonderland Nagoya Dome, in front of 45,000 audience, Miwa sang with great passion while running on the stage, Masa's blur MC, it was really satisfying. 🎶 I finally got back to the live performance with my voice before Corona. 🎶 Drunk from the concert, I went home and opened the gakki. I bought this sake at the spring brewery opening. 🌸 This sake can only be purchased at the time of the opening of the brewery and is sold out in no time. I finally got it this time. 🎶 I was told to be careful about opening the bottle, but I was able to open it safely as it had been sitting in the fridge for 3 months. It has a gorgeous flavor of Omachi, a gentle mouthfeel, and a soft nigori taste. It's a very nice wine. No wonder it is so popular. I will buy it again at the opening of the brewery!

Every year after May, sake made with Akaban Omachi and brewed with No. 7 yeast is released. 🍶. I bought it last year and it was delicious so I bought it again this year and let it sit in the fridge for a while. 😀 This sake has the freshness of a nama-shu and the robust flavor of azuki, and can be served at any temperature range. Gorgeous flavor of Omachi rice and a slight bitterness on the back end. 🌾. 500ml was gone in no time. 😋😋😋.

It's my favorite tamitsu. 🍶 This special junmai sake is made with rice from Mie Prefecture and yeast from Mie Prefecture. The soft aroma and gentle flavor convince me that this sake is carefully made by a family. 😋. By the way, sake made with water from the Suzuka mountain range is delicious. Both in Mie and Shiga Prefecture 😋😋.

I was able to buy it again this year, Sogabe. The first one was drunk in 2015. (3rd picture)) I could usually buy it back then. 😭 It has a good balance of acidity and umami, it's definitely similar to a white wine. 4 days of aging will help it settle down and become more umami. I think I like it better if I leave it for a while. I used to think it was more acidic, but it seems to be getting more and more like sake every year. Sake 🍶😋😋.

From my son who works at Muji, here's a Father's Day gift of alcohol, thanks 🎁. MUJI, the brewery and the farmer teamed up to make this sake from Koshihikari rice grown in the terraced rice paddies of Tokamachi. 🌾. MUJI has numerous stores, but only a few seem to carry it. Now, as for the taste, it is like a softer version of Niigata's light and dry, with the flavor of the rice asserting itself. It is best when paired with rice dishes, pickles, dried fish, etc. 😋😋😋😋😋
