Raku no se brewed at a brewery near my home. 🎶
Until a few years ago, the main brewery was selling vats, but they have changed direction and are now making sake with a special focus.
There are no ginjo or daiginjo, all are yamahai junmai, unfiltered, four-stage brewing.
It is a rich, umakuchi (delicious) sake with moderate acidity and a high alcohol content. It is best matched with miso dishes such as miso stew and miso katsu (pork cutlet). It is also a good choice for warming sake.
Naturally, heated sake is also a must. 🍶😃😃😃
