Purchased at the end of last year. It is a winter sake, but I opened the bottle when the 🌸 was falling. The nigori will be a standard from this year. The nigori has a delicate feel like fine powder snow and a fresh, rich sweetness. Now there is no more nigori in the refrigerator. This season is followed by the "kurabiraki" (opening of the brewery) and other sake events. I am sure there will be new sake in the fridge again. 😋😋😋😋

After visiting five Suwa breweries and sake breweries last Saturday, I visited Mikotsuru for the third time. 🎶 And after the tasting, we bought the server sake. This day it was Yamae Nishiki. The best rice sake at Mikotsuru, I was lucky. 🌾. I went home and opened the bottle. 😋😋😋😋😋

I bought a bottle at the brewery opening in January. It is a delicious heated sake. It is a very heavy sake. The main brewery is Yamahai, so it is massive and heavy. It has a strong nigori rice flavor. It has a strong acidity at room temperature, but when heated it turns into a mellow sake. It is a very good sake.

This sake is brewed with Diamond Aizan, a sake rice for select sake stores. When the bottle is opened, it smells sweet with a fruity aroma, strawberry🍓 after all. The taste was a little sharp right after opening the bottle, but after a few days, the sweet, round, gentle flavor develops. It is delicious. 😋😋😋😋 By the way, I am going to Hida Furukawa tomorrow for the first time in 5 years for the opening of Watanabe Shuzo's brewery. I'm really looking forward to it!

It says be careful when opening the bottle, but there is a vent hole so it will not explode💥. When it comes to nigori, the first thing you notice is the supernatant. It is fresh and goes down your throat nicely. Next, the nigori is mixed in, which is sloppy and does not mix well. I couldn't wait to drink it without mixing it well. It's like a rice topping full of rice. The last gosu was heated. I guess nigori should be heated. It has a lot of flavor. 😋😋😋😋

I ran the Kyoto Marathon again this year last Sunday. 🏃. When I am running in Kyoto, the place that gets me the most excited is not Ninna-ji Temple or Watarigatsu Bridge, but in front of Matsui Sake Brewery. (LOL). 4K to go, my legs are at their limits, but the sake 🍺🍶 after the finish line is finally glimmering. I bought this sake at Isetan on the way home. They were selling it at the store and said they were out of their signature 4-goupe bottle of Ruri, so they brought this sake. This sake was also well-balanced in terms of freshness and umami, as is typical of Kamizo. I have never seen a sake with this label, but it is very tasty. 😋😋😋😋😋 .

I drank Oden🍢 Manotsuru at a restaurant and liked it so much that I was looking for it to drink at home and found it at Asano Sake Shop in Kyoto. The rice is Koshitanrei, a Niigata sake rice made from Yamadanishiki and Gojumangoku. 🌾. The taste is a combination of the best of both rice varieties, with an initial sweetness, a touch of acidity as you sip, and finally a spiciness that disappears after a few sips. It is a collaboration of the gorgeousness of Yamada-Nishiki and the dryness of Niigata. I found a sake that I like. 😋😋😋😋😋

Finally, I was able to drink Hirotogawa Nigori. If you like nigori, this is the one you really want to drink. When I opened the bottle, the sake started to rise, so I had to open and close the lid for about 5 minutes before it finally settled down. The supernatant is good enough to drink 😋. When I mixed it, I could taste the gentle umami and the rice flavor. I thought it was indeed a popular nigori sake. 😋😋😋😋

Sake from the brewery that was popular last year at the Nagano sake event, YOMOYAMA NAGANO, is now available for drinking at home. It is a small brewery run by a couple. The sake is low in alcohol, high in acidity, fruity, and very modern. It really is like wine. I think it will grow in the future. I'm sure it will grow in the future 😋😋😋😋😋.

This sake is a souvenir of Dogo Onsen from my son. When I took it out of the box and was about to drink it, I found it was only half full. Then he told me that he drank it while eating a tai-meshi gozen at the inn 😢😹. The taste is clean and slightly dry, and the sake itself is a modest statement that perfectly complements the food, making it a behind-the-scenes sake. It would go well with tai-meshi, I envy you. I was finally able to drink this sake. It is the first sign of winter, or rather, the middle of a cold wave (lol). I put the sake bottle on the tifal and wait while watching the thermometer. I can't wait to take it out and drink it. Tanaka Rokuugo was opened for the first time this year for drinking at home. I had drunk it outside, but this was my first time drinking it at home. I wanted to drink it carefully. On New Year's Eve, the second bottle was Takasago, which my daughter chose from a stock of about 10 bottles when she returned home. I asked her if she knew this sake 🍶. This is a limited edition sake that I bought at the new sake festival held at the brewery last month, they told me to open the bottle after 12/9, so I let it ferment in the bottle as they said. 🎶🎶🎶 I was very excited to open the bottle, but it opened normally without any problems. The nigori is also fresh and dry, as it is a dry Boshimaya. It is fresh and dry 🍶. I decided to warm up the sake. It was so delicious. 😋😋😋😋😋😋😋.

I bought it at the brewery in the summer, and it was quietly sleeping in the refrigerator. I let it settle slowly and opened it with a safety pin 🧷 on top of the stopper as per the instructions, and about half of the boar's mouthful of sake gushed out in a mist with gas. 😭 It calmed down after a minute or so and I did it over the sink so no damage was done. If you buy this sake and don't want to miss a drop, I suggest you open and close the stopper patiently without using a pin 🧷 and let the gas out. The sake when opened is, as expected, tight, fresh, and the gas is fresh and expansive. After two days, the flavor increases and it takes on a different face. Kamizo is still delicious. 😋😋😋😋😋

Yamae-Nishiki from Tohoku Izumi. Yamae Nishiki is the rice that Nagano sake, especially Mikotsuru, is best known for. 🌾 When I drank it, I had a very different impression from Gokotsuru. Raku no se brewed at a brewery near my home. 🎶 Until a few years ago, the main brewery was selling vats, but they have changed direction and are now making sake with a special focus. There are no ginjo or daiginjo, all are yamahai junmai, unfiltered, four-stage brewing. It is a rich, umakuchi (delicious) sake with moderate acidity and a high alcohol content. It is best matched with miso dishes such as miso stew and miso katsu (pork cutlet). It is also a good choice for warming sake. Naturally, heated sake is also a must. 🍶😃😃😃
