I bought it at the brewery in the summer, and it was quietly sleeping in the refrigerator. I let it settle slowly and opened it with a safety pin 🧷 on top of the stopper as per the instructions, and about half of the boar's mouthful of sake gushed out in a mist with gas. 😭 It calmed down after a minute or so and I did it over the sink so no damage was done. If you buy this sake and don't want to miss a drop, I suggest you open and close the stopper patiently without using a pin 🧷 and let the gas out. The sake when opened is, as expected, tight, fresh, and the gas is fresh and expansive. After two days, the flavor increases and it takes on a different face. Kamizo is still delicious. 😋😋😋😋😋
