The base is a slightly dry, yet mellow and flavorful local sake 🍶.
The color of the sake is "yama-buki" because no activated carbon is used in the blending or filtration process, in order to take 100% advantage of the flavor of the rice and water.
It is a well-balanced food sake that can be easily matched with both Japanese and Western food 😄.

Purchased at a direct sales place. This Saijo sake has both a gentle and pure rice-like flavor. It has a slightly sweet taste, but it also has a thick bone structure, so you can drink it as a mid-meal sake or as a single shot.

I was able to choose the bamboo container of my choice and fill it with sake.
I have had Kamoizumi junmai sake by itself,
I have had Kamoizumi Junmai Sake by itself, but this bamboo sake has the aroma of bamboo soaked into the sake,
I found it to be mellow, round and deep in flavor.

The standing aroma is melon-like, but it is elegant and not assertive rather than floral. When you drink it, it is soft on the palate, as is typical of Saijo sake, with a sweet umami taste and a clean lingering finish that is not clingy.
I personally prefer Saijotsuru Shinsei or Sanyotsuru Concave, both also from Saijo, for 4-gouple bottles, but they are very gentle sakes for home drinking.
