The label reads Ibuki, which is quite difficult to read. I was curious about this brand and happened to drink it at a tavern. I had drunk it some time ago, so I vaguely remembered the taste, but it was a very well-balanced sake with a fruity taste and a delicious rice flavor. It is a little more drinkable than a light drink. Maybe it is because it is a pure sake. It is quite a tasty sake. I would like to try other kinds of sake.

This is "origin" from Higashitsuru, which I drank last year and really enjoyed. We are confident that the most popular sake is the one that we are most proud of. The depth of the well has been deepened to achieve a satisfactory quality, and this is a gem that has been released with full anticipation. It is as delicious as ever. Slightly effervescent and not too sweet, it is an extremely tasty sake with a delicious rice flavor. It tastes somewhat like lychee and the umami of rice. It seems to go well with meals. Given the rice flavor, it would go well with white meat fish sashimi. The sake by itself is also good enough.

To be honest, I tend to avoid purchasing hiyaoroshi because it has a strong umami flavor, which is somewhat different from my personal taste. However, I bought Omine's hiyaoroshi because it was a bit special. This hiyaoroshi is a freshly-pressed Omachi, so I had high expectations that it would probably be fruity. When I actually drank it, I found that it did indeed have the umami of rice typical of hiyaoroshi, but it also had a grape-like acidity and full-bodied flavor. It is an extremely good sake that balances the hiyaoroshi-like umami with sweetness, acidity, and richness. It seems to go well with Camembert cheese, too. It may also be good with salty foods.

I've had a lot of Kudokibe, but this was my first dry sake, so I bought it. Recently, I am getting hooked on the charms of Omachi, and I am looking forward to seeing what it is like. I wondered what a dry Kudokuteki would be like, but as one would expect from a sake brewery of such high caliber, the taste was refreshingly sweet and refreshingly fruity. It was refreshingly fruity, and although it did not have the usual sweetness, it was very tasty. It is a modern fruity sake without the usual mild sweetness, but with a slight sourness. It would go well with white fish sashimi. It is very tasty.

I have a vague recollection of the taste of one of the drinks I had at an izakaya, but I recorded some of the things that left an impression on me. I have had Morishima before, but my impression at the time was that it was a "calm, modern sake," with more acidity and bitterness than flamboyance. However, my impression of this one was that it was more fruity with a touch of glamour. I think it had both fruit and rice flavor. Even in the same brewery, the taste varies greatly depending on the rice and the brewing process. It is interesting.

Miyasaka Brewery is famous as the originator of Shichi-go yeast. This is the Miyamanishiki version of the lineup of different rice varieties of the No. 7 yeast. The label says it has a sharp and tight impression, but is it? I have never really thought about the impression of the No. 7 yeast, but in this sake, the impression is that it is fruity with a delicious rice flavor. The acidity is low, so it may be similar to peach. The concept and quality of this bottle, which is unique to Miyasaka Brewery and makes full use of the characteristics of the yeast, are both solid.

I received this sake to compare with Yamanoi's 50. I found out later that this one seems to be made from four different types of rice. It has a melon-like taste, and the yeast may be the same as that of Yamanoi 50. This one has a little more umami and sweetness, and has a mellow and delicious taste. I drank it with Matsumae pickles, and it was quite good. It might be good with something salty.

Yamanoi is a brewery in Fukushima, and the toji, Kagehiro Watanabe, makes sake based on the concept of "brewing sake with a free spirit. Fukushima Prefecture has many high-level sake breweries, and we have high expectations for this one. My impression is that it has a fruity, melon-like flavor. The rice polishing ratio is 50, and the taste is clean and refreshing without any cloying flavors. I had never been aware of Yamanoi before, but it was very tasty.

The letter "i" is completely different from the usual Genmai label. The dots are rice. The reason why it is an "i" is because Aizan is used. What would happen if Chino-san made sake using Aizan, which is said to be the diamond of sake rice, as well as the cuteness of the label? It is very interesting. It has a creamy and fruity taste of lactic acidity, perhaps from the unfiltered raw. Fruity, but what is this? The mild sweetness, acidity, and bitterness are like grapefruit. But the acidity is not that much, so you could say it's peachy. It seems to be a voluminous sake. It is a sake that can be drunk on its own and has a strong flavor.

Here comes the Omachi version of our beloved Isshaku Suisei. Omachi is the parent of all sake rice, and when you look it up, you will find many words such as original, wild, and so on. It is said to be difficult to grow and handle during the sake brewing process, but it is easily soluble in water and produces a voluminous sake. Some say that it is a variety that can easily be characterized by the characteristics of the brewery. Just like the impression on the label, Isshaku-Suisei's Omachi has a very good balance of sweetness, acidity, and bitterness, and tastes somewhat like a grape. It is a type that is pleasant to drink on its own. I used to avoid Omachi because of its wild taste, but this bottle made me think that I would like to compare various Omatistas from now on.

This is a bottle from Bungo Meikozo, a brewery in Saiki City, Oita, that makes amazake and other alcoholic beverages. It seems to be a sake made with local rice and water. The aroma is a bit melon, and the taste is clean and not so strong in umami and fruity. It may go better with fresh cheese than sake by itself. It is a refreshing sake, and the taste is quite good. I don't know what kind of flower the floral yeast is, but it is a delicious sake.

I believe Kikusui is a very large brewery that also operates in supermarkets. As an example, Funakuchi is renowned as the strongest sake in convenience stores, and I believe its stable quality and low cost are its main selling points. Kikusui's dry sake seems to be single-fired and freshly stored, and I feel that they are particular about this aspect as well. My impression is that it has a lot in common with Funakuchi in terms of taste. It tastes sweet and umami, but less fruity than Funakuchi. It has a strong umami taste of rice, so it is easy to pair with dishes that are served with rice.

Kanji Chiebijin label, not often seen in Kanto area. It appears to be a locally distributed version. It is made with Yamada-Nishiki and brewed with well water that comes from 200 meters below the brewery. How is it different from Hiragana Chiebijin? As for the taste, I felt that the flavor of the rice could be expressed well. However, the soft peach-like sweetness typical of this brewery is still present. The impression is that it is a little more subdued than hiragana. It seems to be good with tempura. Because of the sweetness of the rice, a light salty taste may go well with it.

Iyo Kagiya, a sake from Ehime, this is a freshly squeezed, unpasteurized sake, but it remained at the sake shop until August. It is rare. It tasted fruity and fresh, as it is a nama sake. It is a very good sake with a bit of rice flavor. I think it tasted a little apple-like. I think it had probably been aged in the refrigerator for half a year, so the umami might have been a little stronger. But it was easy to drink.

It is a sake from Oita, and the current brewer, Mr. Ikeda, took over the Daichi family, which was the original brewer, in 2019. The Hanashimi brand itself seems to be relatively new, released at that time. We were given a bottle of raw sake, which probably doesn't come around very often. It was quite delicious to drink. It has the fruity taste of nama-shu, but also brings out the flavor of the rice. The taste is like a melon with black honey, or is this what yeast No. 9 is usually like? It is a brand that is not often seen in the Kanto area, but I think the level is quite high.

Murasakiu is a sake brewed by Hiromi Ono, a Nanbu female toji. Strawberry Label is made with Iwate Gin-Otoko and Iwate yeast Giovanni's research. It feels like a local product. First of all, the label is stylish. The taste is surprisingly a type that retains the flavor and sweetness of the rice. The morning glory label I drank before also had a rice flavor, so I think that is the direction the brewery is going. It is a sweet-tasting, mellow sake with a touch of acidity. It would be good with dishes that have a strong flavor. If it is fish, it may go well with red meat and simmered dishes.

I have been somewhat avoiding Yukinobijin because of its dry taste, but recently I decided to try it because I like sakes that are not sweet. The brewery itself is small, but they have the latest equipment to brew delicious sake. The taste is certainly not very sweet, but it is juicy! It does have a juicy feel. I think grapefruit with less sweetness would be the best fit. The sake is still low in sugar, with a sake meter rating of +8, but it has a modern dry taste. This is quite tasty and I would like to encourage sweet sake lovers to try it. I think it would go well with white fish or something.

This sake is a special order from a liquor store and is made from rice called Ise-Nishiki. It is a wild and hard rice that does not dissolve easily, and is said to be very difficult to make sake from, but it is incredibly well put together. It takes a long time to dissolve, so I guess it makes a voluminous sake. Kudaki has low acidity and sweetness, but the cohesiveness is still wonderful. The acidity is not there, but the sweetness and fruity are very good. As for the taste, it is tropical. I somehow felt mango and strawberry-like. If you want to pair it with tuna redness or some other strong flavor, it's fine. Easy to understand and delicious.

The National New Sake Competition has been held since the Meiji Era (1868-1912) to evaluate sake production techniques and quality, and approximately 800 sake products are evaluated. It is said that only about 20% of the sake brewed there can win the gold medal, but ICHIHAKUSUISEI has won the gold medal for nine consecutive years. This time, I received some of the sake I bought for a friend's housewarming party. It was probably the first time for me to drink such a good sake, but it is simply delicious. It was refreshing, yet sweet, and not too alcoholic. It also seems to be fruity but quite restrained. The price is too expensive for everyday use, but as a celebration sake, it is a quality sake that anyone would say is delicious.

Sawaya Matsumoto, which I somehow never had a chance to drink before. No, actually, I had been drinking it five or six years ago, but I just had not kept a record of it. It's just that although I thought it was delicious, I somehow never had a chance to drink it specially. The producer of this one has actually gone through quite a lot of changes, and there have been stories among fans about how the taste has changed. I heard that there was some talk among the fans about how the taste had changed. But when you actually try it, you will find that it has a stable taste. The balance of carbonation, acidity, and bitterness is very good. Grapefruit is the perfect word to describe it. I think it would go well with deep-fried food, or with white meat for sashimi.
