Purchased from Fukushima Prefecture/ Gonoi Sake Shop. This cold grated sake is new to me. Organically grown Gohyakumangoku, brewed with a yeast from the brewery's own yeast. The rice polishing ratio is 60% and the alcohol content is 15%. It is a fire-aged sake🍶. The aroma upon opening the bottle was only slightly sweet. I did not detect any melon-like aroma. When you take a sip, a slight acidity and deep rice sweetness spreads in a whiff. The mouthfeel is smooth. While in the mouth, the rice-derived sweetness can be felt, and as it goes down the throat, the bitterness of the alcohol quickly appears and tightens it up. In my opinion, it has a good sharpness. It seems to go well with oily food. The acidity is not strong, making it a perfect sake for pairing.

I went to Gonoi Sake Shop in Aizu, Fukushima Prefecture, to buy hiyaoroshi from Fukushima. The label is an eye-catching autumnal 🍁 and 🌕 design, so I picked up a bottle without thinking. It is 50% polished rice. The yeast is said to be malic acid productive yeast, and since this is the first time I've had a bottle brewed with this yeast, I'm looking forward to drinking it 😊. When the bottle is opened, the aroma is of soft 🍎, and the flavor is subdued. The mouthfeel is gentle. The sweetness is moderate and the ripe, round sweetness spreads quickly. While it is refreshing, the aftertaste has a restrained acidity and the same level of alcohol bitterness that spreads in the mouth. For me, it is not an unpleasant bitterness, but rather a pleasant accent. Overall, it has a very ripe apple-like sweetness that goes down your throat without being too assertive, and the restrained acidity and bitterness linger on the palate. For me, 🍶 it is a delicious sake that can be faced well on its own. The acidity of hiyaoroshi is less pronounced than that of summer sakes, and I have come to realize that the acidity of hiyaoroshi is more subdued. The alcohol content is only 15°, and the quality of the sake seems lower than its alcohol content. It is a raw sake with no heat treatment. It is a sake that should be served well chilled.

The flavor reminiscent of peaches and pears spreads plumply. Sweet with a clean aftertaste. Refreshing and easy to drink! After a few sips, give it a good stir. Mellower, deeper and sweeter Rich sweet and delicious 💖. Can't stop the juiciness overflowing in your mouth 💥. It was soooo delicious! Beer is VERTERE from Okutama

I made a pilgrimage to Mr. Gonoi's sanctuary. I finally got to buy it 🎉🎉! Because everyone at Sake no Wa is pushing for it 🎉🎉! I've been curious about it for a long time. Finally opened the bottle this day 🥃🤤! ❗ Ahhhh... Delicious! Super tasty 😋😋. The aroma is not so strong and mild. Tingling💦Swishy and fun to drink! Good sweetness and umami flavor 🤤. Full-bodied The deep flavor spreads out and it's so delicious 💓 Full of fruitiness, the juiciness overflowing in the mouth is amazing😮😮😮. Peach🍑 or maybe lychee. I love the slight bitterness at the end. Rich but not heavy because of the beautiful aftertaste. I could drink this all the time 🤤🤤🤤🤤🤤. The sake cup is Aizu Ryumon-yaki 😀.

Kikusenkawa is a GW homecoming sake. A bottle of ginjo that is refreshing and easy to drink. Cheap, tasty, and delightful. I wanted to take my time to look around the liquor store, but I had to decide what to buy with just one look because I had my oldest son with me and left my wife and second son in the car. Therefore, I chose this one bottle that I could not miss.

Posting leakage median. Original brand from Gonoi Sake Shop. Is there a color label series with peach label or something? There were a lot of original brands on display, such as Oo and Fukurodorari. I think the aroma was subdued. I remember the taste was quite sweet...but I don't remember what it tasted like a few days before the quintessence. I got the impression that the taste did not have that many ups and downs.

Naraman is a wine that is rarely drunk. It is a Junmai Ginjo, which is a bit expensive. The aroma is melon or cemedine-like. It is a beautiful sake with a refreshing sweetness. I was a bit tired of new sake with ogara-mi and nigori, so the filtered sake tasted even better.

Tenmei Chutori Sango-go, a return drink. I had to drink Sango-go before drinking Ni-go. The No. 2 is still in the refrigerator at home. The brewing has been renewed. The taste is...somewhat less impactful than the previous Sango-go. It has a good balance of umami, acidity, and sweetness, but it seems to be too neatly put together...I think it would be a very beautiful sake if it were orihiked and hi-ired. On the other hand, it may be amazing that it is so beautiful in its raw state.

Memorandum. Souvenir sake from back home. It is a hiyaoroshi of Naraman. The aroma is faintly fruity. Melon type? The taste is also cucumber sweetness, but the aftertaste is quite refreshing. This too left a good impression. I visited this brewery when I was back home, but I regret that I did not get around to visiting.

Memorandum. Souvenir sake from back home, Odayaka hiyaoroshi. Sourness and sweetness reminiscent of plum wine. Plenty of umami. It was the most expensive sake among the souvenirs. However, it was a good decision to buy it. It is one of the best tasting sake of the Niida family. What's that? I think I prefer Odayaka to Shizenju. I might try to follow it for a while. I don't see it much in Tokyo...

This is a souvenir sake from back home, Tatsusen's autumn harvest sake. It is mellow on the palate, yet has excellent sharpness. It is a brand not often seen in Tokyo. It is brewed in Wakamatsu City. The label says it is an "akiagari," but I guess that means it is a "hiyaoroshi," or "hiyaoshi" sake, since it is made fresh. The rice polishing ratio of 63% is exquisite, and the way it is chopped is wonderful.

Memorandum. The last souvenir sake from back home. Tenmei no Aki-agari, twice fired. Mild aroma. It has a mild aroma and a thick, sweet taste. A little tangy at the end. It's nice. Delicious. However, Tenmei is now also hiyaoroshi. How many kinds of autumn sake are they going to serve? We got a lot of delicious sake, including sake from back home, Niigata, and souvenir sake from back home. The next time will be around the time of new sake or early spring... Sake is so lonely in the middle of summer. The lineup of summer sake is inevitably reduced. Then again, maybe I'll indulge in autumn sake during the Silver Week? Yamagata or Miyagi would be nice as an outlier. How will I take the kids out?

The winds of homecoming sake are blowing. I don't know much about this place, but it seems that they don't do seasonal sake, but mainly raw sake. I love this brand, but I have never seen it in Tokyo, so I have to buy it when I go back home or by mail order. The taste...I think it was good...but I drank too much and don't remember. It was after I drank the rest of the Kuniken and about 3 gou of Odayaka in a small bottle. And the reality that I only had about 1 gou left to drink scared me. Clearly I drank too much.

Kunikatsu no Aki-agari. It is a bottle that I want to drink every year. But it is a bottle that I can't drink very often. This year, it was surprisingly easy to get it when I went back to my hometown. Now, the taste...delicious. It has a gorgeous aroma of rice and a robust flavor. It also has the robustness that is typical of Kunigon. It has the depth of nostalgia to accept horse sashimi with spicy miso.

Tenmei's Nakadori No.2. Dry and light as the concept. The aroma is a little sweet, but the taste is light and light. It's a new sake made from Miyamanishiki, so I wonder if it will become an autumn-agari Miyamanishiki after a summer after the new year. It is amazing that it has such a light taste even if it is oriharami. The harmony of umami and lightness is exquisite.
