Sake made with Bodai yeast from Bodaiyama Shorekiji Temple in Nara.
This sake is made by Kuramoto Sake Brewery!
It has the sweetness and acidity typical of Bodai Hashiroshi, with a faintly distinctive aroma 😊.
This one is delicious too 🥰.
I haven't had Kuramoto sake yet, so I'll have to look for it!
This concludes my son's graduation & job hunting celebration!

Aroma of oak, caramel and slight bitterness 🥰.
I guess this is similar to brandy or Shaoxing wine 🧐.
Seems to go well with tzatos and the manager said it tastes great on the rocks with ice made from coffee 🤔.

First of all, Tenka Nishiki
This is a Junmai Daiginjo that had been made in a bag and left unrefined for 180 days. The unrefined sake was left to mature for 180 days 😳.
Tenge Nishiki is supposed to be a dry sake, but it had a sweetness like mirin (sweet sake) 😋, but the second half was dry and the balance was kind of bad? It was a strange sake 😁. tomoさんI introduced him to the manager as my son and told him I brought him to celebrate his graduation...what a No. 6 service he gave me 😳🥂🥂.
It was gorgeous and had a nice balance of sweetness, umami, and sourness, and according to my son, it wasn't like sake in a good way 😳.
He really liked it 😁.

I came to Kumamoto 🐻 this time and saw Ajisen Ramen on the way to Minamiaso!
Ajisen Ramen used to have branches in Taiwan, but all of them are closed now!
It's a shame 😢 because it was the first ever Japanese ramen chain in Taiwan!
I was very young at the time 👶, maybe more than 30 years ago.

Dry? I feel a strong bitterness.

Nice looking sake with a clean dry taste!
The initial bitterness was quite strong and I didn't really like it 😅.

The flavor is typical of Jikin, this one is good too 🥰.
I think Tojo's aroma was more gorgeous 🤔.
To be frank, my stupid tongue can't tell the difference in terroir 🤣.

I had high expectations for this wine, but...
I was expecting a bitterness and pungency because of the aging process, and I didn't feel the beautiful sweetness of Aizan 😢.
I didn't really like this one 😅.
