Tanaka Rokugo's Shiraito Sake Brewery sent Yamadanishiki from Itoshima and koji to Sengoku, Sengoku brewed the sake using the raw yeast method, and then brewed it again at Shiraito Sake Brewery. And the price is also amazing 😭 It has a mellow sweetness like grapes🍇 and ripe apples🍎 and a sourness unique to Sentori. It was a very tasty sake, easy to drink with a deep nostalgia. It was amazing when adults took it seriously, like something I longed for as a child 😁.

It was a gift from a junior colleague at work. I received it last year and remember that it had quite a punchy 🤜 flavor. It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. It's only 3 days old and it's getting sweeter and tastier 🙌 I got it in a bottle, so I'm thinking of trying some heated sake with ✖️ on the back label 🧐.

I told myself that there was no use in cherishing it forever, it was meant to be drunk, not displayed, and opened the bottle: ‼️ The aroma is like plums and cherries, the sweet and sourness is unique to Shinmasa, and the aftertaste is still very refreshing. It is still delicious 😋. I regretted it the next day because it was Saturday and I couldn't restrain myself 🤣.

I was able to free up some space in the fridge, so I was late to the party, but I also had some Ishikawa sake. Since Pon-chan was drinking it, I was curious to buy some myself 😆. As the back label says, "soft, fresh, slightly effervescent". And as Pon-chan reviewed, the 3rd day is delicious 😊. It was a very satisfying bottle with a melon feel👍. I heard from a colleague who went to support the evacuation center that it sometimes gets as cold as a refrigerator. I hope that electricity will be restored soon and the coldness alone will be manageable. I wish for the earliest possible recovery.

I've always wanted to drink Hiraizumi... but it was nice to meet you at a very special one 😆. Sake level -24, acidity 3.5...kinda scary. Yeast #77, high malic acid producing multi-acid yeast 🤔. What? 🤣 I drank it anyway. The smell is children's toothpaste (strawberry flavor) 🍓. Very sweet and sour. Huh? Is it a sake? It is so sweet and sour. I'm sure it's a very high spec, good sake, but I'm not a fan of kijoshu 😅. Next time I would like to drink normal sake from Hiraizumi.

This one was recommended by Mr. Yoohee of the Sake-no-wa Kansai Branch (also serving as the Kyushu Branch). On this day, I decided to enjoy Yokoyama to the fullest and started preparing oden in the morning. It was the first time for me to prepare oden by myself, so I did a lot of research on my smartphone, but the preparation was very difficult.... I was told to put a hidden knife in, and to cook the suji meat in rice brine for 2 hours, and each ingredient has a different preparation 😂. The people at the restaurant are amazing😅I'll try to taste it more carefully next time 🍢. Now, Yokoyama-san. The aroma is subdued, yet fruity and slightly chocolatey. The taste is beautifully sweet and acidic, moderately bitter, and as good as some of the hard-to-find well-known sake👍. I tried heating it up even though it is a draft sake, as I have an image of heated sake with oden (oden). The aroma and sweetness became stronger and it was quite good 😊. I also enjoyed it with dashi soup stock 🍶. ...well, it was better cold 😁.

This is my first petit offline meeting with Yasubeyesan😊. Rafapapa and Yasubeyesan were going out for a drink and I joined them. Thank you Rafa and Yasubeyesan 🙇. At "Maruriki Shuzo", Yasube's favorite sake brewery. It's a great place with a lot of good sake 😍. The toast was "TSUNAGU", Maruriki's original brand brewed by Sekiya Brewery of Houraisen. It's a fizzy type and so good 😋. I drank a lot of different kinds of sake, but I decided to post the last one I had, Jyushiyo. I don't need to explain anymore 🤣. Yasube-san is a really great guy and we chatted a lot about how he came to enjoy sake, his body make-up, his thoughts on his work, etc. 😊. It was a lot of fun! Thank you so much ☺️

I still want to drink nigori this time of year, so I bought Shizen Shu no Hatsuyuki! I bought it for the second time 😅. Middle age memory is bad 🤣. Slight and gentle aroma of muscat, banana and peach. When opened, it is slightly effervescent and slightly acidic, but the sweetness gradually catches up with it. On the second day, the acidity settles down a bit and changes to my liking. Delicious 😋. My wife seemed to like it as well, and we started eating and drinking sake together in the kitchen while preparing dinner. By the time the meal was on the table, the bottle was empty 😆. It was such a delicious Hatsuyuuki 😋.

One of Sukumasa's first sale set. I think this might be my favorite Sentori I've ever had 🧐. I've had Rei and others, but this one is definitely my favorite😍. Elegant muscat aroma, chili gas, excellent sweet and sour balance. I'm still a sake chick myself 🐣, so apparently fresh sake suits my body. But Sentori is great! I find something new every time I drink it.

This is one of Sukumasa's December hanpukai. This is the first time I have had Okuharima, including outside drinking. I was told that the bubbles were not that vigorous, so the bottle was opened without any spillage. The supernatant is fresh and juicy, like green apple🍏. When mixed with lees, it has a milky mouthfeel and is also delicious. The overall taste is dry, but the sweetness is also well pronounced. At the end, the lees are so thick that you would think it was a doburoku (a Japanese sake). The amount of lees is so great that you would think 😆. I drank it over the course of 3 days, with one day in the middle, and it was still fizzing properly on the third day 🫧. It was quite a good debut of Okuharima.

People in the Hokuriku region are suffering greatly, and I can only pray that peace and quiet will return to the region as soon as possible. I am keenly aware of how thankful I am to be able to spend New Year's at home with my family. I started my first sake with Houou Mita 🍶. It has a sweet muscat aroma and a mellow sweetness that permeates the body 😊. Yum! While sitting around the crab pot with my family, I noticed it was empty 😳. Lately, I've been noticing that a lot of sake is empty 🤣. I am going to enjoy all kinds of sake in 2024. Thank you all for your support this year.

Sparked by nirvana tortoise spark at our family's year-end party ✨🫧. I didn't detect much aroma, but the delicate sweetness with hints of melon🍈 and peach🍑, moderate acidity and strong bitterness kept the cup going 😆. My wife and kids and I were oohing and aahing over it and before we knew it, it was gone. It's a scary drink 🤣. This year has been a fulfilling year for me, meeting everyone at Sake-no-Wa in person and being a part of the LINE group. I am looking forward to enjoying the sake life again next year 😊. Thank you to all of you and everyone involved. I really appreciate your help 🙇. I look forward to working with you again in 2024🐉🍶.

Sake from Kochi Prefecture. The personal image of Waka sister, the country of throbbing classic Japanese sake. Huh? Aroma of strawberry, beautiful sweetness, acidity, and bitterness, and it's sharp. Huh? Kochi's sake is not so gentle ⁇ I thought it was a punchy, gahaha type sake. It is a beautiful sake. It changes the image of Kochi. The Shimanto River is beautiful, and so is the sake.

I was able to get your recommendation and mine. Thank you so much, yum yum 🙇. The bottle had been sitting in the fridge for a while, so the opening went smoothly and I was able to drink only the top clearings. Muscat aroma, elegant and delicate sweetness, light acidity and exquisite bitterness with a crisp finish. Isn't it the best 😊? When you stand the bottle up after pouring, it's a lees dance 💃. As the lees mixes, the aroma changes to a rummy aroma. Slightly sweeter and more flavorful. Silky dry and easy to drink. It's good 😋.

To allow the children to play with their toys to the fullest, our Christmas is starting two days earlier, on the 23rd🎄. So we opened a bottle of Xmas-type that we were lucky enough to purchase again this year: ‼️ This is the first time I've had sake with a cork 😳It looks exactly like champagne 😆. I couldn't open and close it like a screw cap, so as expected it spilled 😅. I caught the spilled sake in the bowl and took a sip 👹 like an ogre's feast! The aroma is mild, with an apple-like fruit aroma. Sweetness is the predominant taste, with a slight sourness and a slight bitterness. The bubbles are so fine-grained that they moan in the mouth🫧. According to my wife, the best beverage on earth. It's wonderful, but if you pair it with a heavy meal like pizza or roast chicken, you'll get tired of drinking it. I thought it would be best as a toast or aperitif. I couldn't finish my third glass myself and had my wife drink the rest 😭. It's Christmas, so it can't be helped, but it was the Xmas-type I wanted to pair with a nabe with kombu dashi and ponzu sauce 😆.

We are happy to see the sake waiting in the fridge for the New Year's holidays. Jikin appeared as if pushed out of the fridge 😁. Clear color, pineapple 🍍 aroma, here we go... ‼︎ ...hmmm? A little bitter😅 The balance of sweetness and sourness is good, but the bitterness seems to precede the sweetness. As I drank more, it became easier to drink, perhaps due to the food. Well, I don't think it was like this 😅. I'm bewildered 🌀

Wakata wrote a delicious review, so I bought it too 😄. Apple, slightly chocolatey aroma. The gasiness is pleasant, and the banana-like sweetness and sourness come at the same time. The aftertaste is slightly bitter and short. This is good 😋. I could drink this for hours 😅. I want to drink as much as possible before it is featured at a big international conference or introduced by a celebrity: ‼️

I had had sparkling wine before, but this was the first time I had had regular flax cat🐈. As described as a high acidity liquor, it is sweet and quite sour. I guess this is not to my taste 🤔. But still, I didn't know this was classified as an extremely dry sake, sake is difficult. I was impressed by how different it was from the same extremely dry sake, Tobiran Black Jack. However, on the 3rd day, it tasted too sour and I didn't like it😅.

At the recent Sake-no-Wa petit off-line meeting, Mr. Umaime told me about Banshu Issen's Cloisonne series. The first time I drank it was the green one, not the orikarami, but I couldn't forget the melon taste, so I bought this one. I bought this one because I couldn't forget the melon taste. But I opened the bottle without any spillage. One sip and that melon feeling comes back 😊. It's so good 😋😋schwashwashwashwashwash melon soda 🍈. It was a bottle so I could enjoy it for a long time. I enjoyed changing the taste while referring to Ponchan's review 🍈. For me, the 4th day is my favorite because it has the best melon flavor. There was a group of people who said it was their melon anniversary, but this day became my melon anniversary 😁.

This is the first time I have heard of Matsuyama Mitsui sake rice😳. Iyo Kagiya is also new to me. I had it cold. The aroma is muscat-like, and the rice flavor spreads, followed by a nice acidity 😅. I thought it would be better warmed up. So we next tried it lukewarm. The sweetness increased, but somehow so did the acidity 😂. I had an image that heating up sake makes it more rounded, but it was as if all parameters were enhanced. Sake is very deep 🍶.
