Shinkame's Mahojin Junmai. This Shinkame's Mahojin was produced in November 2013 and came to our house after 7 years at the liquor store. The last time I posted about it was in March 2023, the day before the WBC final. Two and a half years have passed since then and it is almost 12 years old. In my last post, the main dish was also gratin. I warmed it up hot. The aroma of maturity and the hard flavor, not unlike that of Ihyakumangoku, spread out more powerfully. It goes well with cream and cheese in gratin. We had about 2 cups left and finished it. It takes a long time to grow such a matured sake 😅. I will cherish another encounter and time.

Nigori sake from Kawanakajima is a nigori sake from Kawanakajima that you will want to drink at least once a year. It is basically available at Kinokuniya, located in the station premises just inside the southeast ticket gate of JR Shinjuku Station. Unlike the fruity and flowing image of Genmai, Kawanakajima's nigori sake is a hard-core style, dark, tasty, dry, and crisp, which is the original basic form of this brewery. This brewery is basically a hard-core brewer. Genshu Mai's gorgeous and flowing style is a different story. Bottom line, I would definitely like to drink it at least once a year in the future: ❗️

When I make taro stew (soy sauce based, beef), I want to drink Yamagata Prefecture sake, but since the taro and konnyaku are from Saitama Prefecture, I decided to use Saitama sake. I warmed up a bottle of "Tenranzan" autumn-aged junmai sake from the Igarashi Shuzo brewery in Hanno. It is already rich and full-flavored at room temperature, but the more it is heated up, the more crisp it becomes. It is a good evening sake and could have been served in a full bottle. I remember a post by Shinjo-san two years ago when he came to Saitama and drank this sake at a tasting machine at Koedo Kurasato in Kawagoe and liked it.

This junmai sake is firm but not heavy and elegant, and looks great warmed up. It was ordered from Kotobukiya in Hon Atsugi in January 2023, We would like to let it sit for another year if possible, but the production is so small that it will be sold out before it reaches the right maturity. We have been following the comment of Kotobukiya on their website for 2 years and 9 months now. It has a firm structure that does not collapse even when the temperature is raised to nearly 60°C (140°F), and it has a strong body. As a Saninshu sake, which is known for its hard-boned, heavyweight Junmai sake, Fusotsuru's elegant and soft quality came out even more than when I drank it last year. I felt a renewed respect for the accuracy of Kotobukiya's comments on Hon Atsugi.

Takatsugawa" Junmai-shu from Fusozuru's brewery We ordered this sake from Kotobukiya in Atsugi in January 2023, and it was commented on Kotobukiya's website as "a hidden gem for home drinking". It has been stored at room temperature for 2 years and 9 months since it came to our house, and it has further changed color and has some ooze. At room temperature, it has a matured, savory, and peculiar taste (this peculiarity is also its charm). It is still not hot enough at lukewarm temperature, but when the temperature is raised to 50℃ or higher, it is nice and full-bodied, The caramel-like sweetness spreads and attracts the taste buds. It is a great everyday evening sake, and can be kept at room temperature after opening, and is also suitable for aging.

I haven't had it in a while, Silky and rice flavor at cold or room temperature. I also enjoyed it warmed up, It was a very nice sake, but it was not very hot. The flavor profile is firm without losing its shape. I still feel that it has a high quality as an evening drink.

Celebrate the evening with a glass of Niigata Prefecture sake 🍶. Yoshinogawa is stable in a good way, and in my opinion, it is the standard of Niigata sake. This junmai sake, stored in snow, is light and easy to drink, but has a nice, subtle rice flavor. The main dish was grilled chicken from Isehiro, which we bought at the Nihonbashi Takashimaya Department Store. I ate it without reheating it as instructed, but the charcoal grill was fragrant, neat, and delicious. Yesterday (10/18), I went to Jingu to watch a college baseball game. Meiji finally defeated Waseda's ace pitcher, Tatsuru Ito. In the semifinals of the Hoku-Shinetsu High School Baseball Tournament, In the semifinals of the Hoku-Shinetsu Tournament, two schools from Niigata Prefecture (Nihonbunri and Teikyo Nagaoka) won, and the final was the first time in the history of the Hoku-Shinetsu Tournament that the two schools from Niigata faced off against each other. This is the first time in 12 years that a Niigata team has been selected for the Senbatsu tournament. ❗️ In MLB, Otani had a superb performance, allowing no runs in his first 6 innings of work with 10 strikeouts and 3 home runs, but as a high school baseball fan in Niigata Prefecture, I was surprised and delighted by the results of the Hokushinetsu Tournament. It was a long time coming, but spring will finally arrive.

Toko's Junmai Ginjyo Genshu. This is the first time I have had it in an aluminum can. It has a rich flavor and moderate acidity, and I feel that the richness is conveyed more directly than in the bottle I drank last time. Somehow. When I hear the name Toko, I think of sake from Yonezawa, Yamagata Prefecture. I have been to Yonezawa for about half a month for a driver's license training camp when I was a student, and I have visited Yonezawa twice for other trips. The interesting atmosphere of the "castle town of Uesugi" is wonderful.

Yamagata Sake 100 check-in Ginrei-Gassan honjozo. It has a smooth and gentle taste. I wondered how it would do with warmed sake, but I finished the 300 ml bottle before heating it up. It seems like the type of sake that would be dry and sharp when heated, so I'll look forward to the next time. I was going to add it to the 100 when I made sweet potato stew, but I'd like to make sweet potato stew when it reaches 200.

Ofuku Sake Brewery is located in Nagaoka City, Niigata Prefecture, near the entrance to the former Yamakoshi Village. This kind of I have often drunk it in a glass one-cup cup, but it is now in an aluminum can.
