I never thought I would be able to eat bonito tataki at the end of December. The neighborhood fishmonger is not to be underestimated. So, I opened a bottle of my favorite sake. It is a honjozo, Tamanoi, from Minami-no-Kura. It has a sharp spiciness with an umami taste and a spiciness in the aftertaste. This is a dry male sake. We washed down the bonito with room temperature sake. It is a luxury.

I stayed overnight in Himeji for work. A bottle of Ryu-ryoku Honjozo (single shot sake) that I bought as a souvenir. I have not drank much Ryuriki until now. This is Dragon Power, The rice is delicious and the taste is deep. I drank it at room temperature with dried fish. It is best at room temperature with dried fish, or lukewarm. I remember when I was at a bar and I had a great glass of new sake. I'd like to buy a bottle of it.

One of my favorites in Saga is Matsuura Ichi. It is a ruggedly hard, classical sake. Saga sake is a versatile sake and can be drunk with everything from vegetables to fish and meat. It's a great all-around sake, and can be drunk at room temperature and then warmed up. It is hot, spicy and hard. It insisted that I drink, drink, drink. What is it about sake? This is the kind of sake that makes you want to drink it so much. Is this Sagaan sake?

I go to the local sake shop to buy new Sogen sake, which I look forward to every year. The sake I brought back was last year's new sake. It seems that they bought the stock from the warehouse, so they will have to put off this year's new sake until the store's stock is depleted. On the way home, I buy some fried hormone at a butcher shop. Speaking of freshly pressed sake, the sake from Shiboritate, Shimehari Tsuru and Urakasumi are excellent, but I definitely prefer Sogen Oshi. It is fresh and tangy, with a heavy umami afterwards. It is also good when heated.

I bought hiyayogoshi because the nama-hara I drank the other day was too good. This is the first Spanish mackerel of this year. After all, sashimi is good for Spanish mackerel. Kure's raw sake. It is as spicy as ever. It has a Sake meter rating of +9, but I want to say, "Really? It is deliciously spicy when warmed to lukewarm. Izakaya (Japanese style pubs) are good, but sometimes I like to go to a more expensive restaurant. Kochi has great fish, but also great meat and vegetables. This Kaygetsu is a Yamahai, but its sweetness is too much for hot sake.

Sake of Shimanto. This is the first Fujimusume I have ever had. A soft, non-habitual mid-palate sake. It is a popular sake, and it looks great warmed up. Sake is the best accompaniment to local snacks, such as Sake-Tsushi and Aosa Ten (tempura made of green laver).

I went on a business trip to Kochi to see if I had accumulated virtues in a previous life. Of course, after checking in to the hotel, I went to an izakaya (Japanese-style pub). Kochi's popular izakayas serve Kaygetsu, a sweet sake with no aroma, for 450 yen a sip, and every time I come to Kochi, I think, "This is a drinker-friendly country! The Kaygetsu Ginbai I drank tonight was 180 degrees different from the sake made with cel yeast. However, the core flavor of the sake is the same as that of Tosa sake.

よく行く酒屋に正雪のひやおろしを買いにいったら今年は仕入れないとのこと。。。 かわりではないが、志太泉がこれでもかと並んでいる。オーソドックスな純吟からひやおろし、新酒かどうかわからないが生原もある。 店員に燗酒のお勧めを聞くと山田錦純米生原が良いとのことで購入。 飲むまでは、ひやおろしにしとけば良かったかなーなんて思っていたが、、凄い酒だった。甘さと旨味が抜群に良い。山田錦の 暴力だ。この酒を飲むと他の酒は飲めないと思う。無敵の燗酒。

Nagano sake has not been around recently, but I popped it on the Internet. My favorite is Kisoji hiyaoroshi from Kuroemon XVI's brewery. Modern! I was surprised because Kuroemon XVI was so modern while expressing the deliciousness of the sake, I was looking forward to seeing how punchy the local version would be. It is very easy to drink. I went on a one-day trip to a hot spring in Wakayama. Since I was there, I had a drink at an izakaya (Japanese style bar) near the station. The bonito in Wakayama is delicious! Mochi bonito in early spring is also good, but the fat from the returning bonito goes well with sake. Taiheiyo is a big-boned sake that goes well with heated sake. The Yamahai was wonderful. I think it's been a while since I've had a Yamahai. It's good to go out for a drink once in a while.

When you start buying liquor on the Internet, you tend to overbuy to get free shipping. I have a house full of hiyaoroshi. It's wonderful. Now, Matsumidori Jungin, 55% Miyamanishiki polished rice. Hiyaoroshi-ish hiyaoroshi. It is a rounded and gentle sake. It has a hint of bitterness and is perfect for a mid-meal drink. I bought it because the new sake was good, and I am glad I did.
