Toko's Junmai Ginjyo Genshu. This is the first time I have had it in an aluminum can. It has a rich flavor and moderate acidity, and I feel that the richness is conveyed more directly than in the bottle I drank last time. Somehow. When I hear the name Toko, I think of sake from Yonezawa, Yamagata Prefecture. I have been to Yonezawa for about half a month for a driver's license training camp when I was a student, and I have visited Yonezawa twice for other trips. The interesting atmosphere of the "castle town of Uesugi" is wonderful.

Yamagata Sake 100 check-in Ginrei-Gassan honjozo. It has a smooth and gentle taste. I wondered how it would do with warmed sake, but I finished the 300 ml bottle before heating it up. It seems like the type of sake that would be dry and sharp when heated, so I'll look forward to the next time. I was going to add it to the 100 when I made sweet potato stew, but I'd like to make sweet potato stew when it reaches 200.

Ofuku Sake Brewery is located in Nagaoka City, Niigata Prefecture, near the entrance to the former Yamakoshi Village. Today is the 14 year anniversary of our family wedding reception and after-party. Dinner will be mainly grilled eggplant🍆 with cheese, We will enjoy "Tsururei" hiyaoroshi sake from Shiozawa 😊. We drink Tsururei hiyaoroshi every year and it is characterized by the umami of rice and acidity. It is delicious 😋. I bought another bottle this time. I went to Kawagoe on a weekday off today, ate udon at Musashino Udon Shincha and bought some Kagamiyama at the Koedo Kagamiyama Sake Brewery store in Koedo Kurasato. It has a nice acidity from the raw yeast, but it is light and crisp acidity. Kagamiyama is my sake of choice, and I will continue to watch for it.
