Ponkkk! A pleasant sound echoed through the park* High gas pressure*. The aroma is citrusy and refreshing on the rise! Tedorigawa sparkling dot for UA Collaboration work of Tedorigawa and United Arrows*I didn't have time to go to UA BAR in Harajuku, so I applied for the lottery and got 2 bottles. I remember drinking the yellow one with the dot of Tedorigawa. I remember I drank a yellow one of Tetorigawa Dot. It was a Yamahai with the specs of secondary fermentation in the bottle. This time, it was a Kijoshu, Yamahai with secondary fermentation in the bottle. I was expecting it to be sweet, with a moderate acidity, and a little bit of a shwashy taste, which would be very enjoyable. As expected, it has the acidity of Yamahai, the sweetness of Kijo-shu, and the sizzle of Kijo-shu. However, it was not as sweet as I had expected, and as a kijo sake, it seemed light. I thought it would be sweeter and heavier. The enclosed letter said, "I think it would go well with curry and spicy dishes," so I paired it with mapo tofu. Since the acidity is derived from lactic acid, I felt that it mildens the spiciness and the sweetness of the lees matches the feeling of the sansho*.

Banshu Ikkyo Summer Light Nigori Junmai Ginjo Hiya! Dry and shwashy! The sweetness of the lees is also refreshing* Beautiful sake with a summer flavor*! I have an impression that Hyogo sake itself is dry, so I haven't really tried it, but with this kind of sparkling type, I felt like I could get into it*! The sake rice is brewed with Yamadanishiki like Dekisugi-kun's Yamada Nishiki and Domaine Hyogo Yume Nishiki, and while maintaining the freshness of sake, the effervescence creates a lightness that makes it very easy to drink*.

Futato Jungin Omachi 55 Spark Encountered two almirajis in Koyama dungeon*. Spark, Omachi, and nigori are a very attractive trifecta*. Unlike the fierce one the other day with a bottle of Nigori-no-Nagori Nama-zake, it was easy to open the bottle. The sweetness of the lees is creamy, shrieky, and delightful* It is difficult to describe the bitterness, sweetness, acidity, and richness in a dichotomous way like Ni-Utsuri, but all the parameters can be felt. What is characteristic is the bitterness that comes later, and this bitterness is delicious because it enhances the sense of richness while also balancing the overall taste*. Unlike the intense one we had the other day, we felt this was an excellent bottle of sparkling wine*. Aluminum large is good*.

I think I will open a bottle of the blessing from the Yamakawa dungeon and thank the No. 6 yeast for its fermentation*, but I also love No. 12 yeast and No. 8 yeast*, or rather, I thank the koji molds as well! Senkou Happy XmasGEM by moto Chiba Marie Out of season series* I got this one for Christmas last year, and ended up drinking other sake for Christmas and forgot about it*. Sentori ✖️Collaboration work by Marie Chiba, featuring Sentori made in 2017, soaked in bourbon barrels, and assembled with new sake from 2021, which is her specialty* The label is illustrated by Marie Chiba, which is very tasteful*. The nose is apple, caramel, and a light Shaoxing wine flavor. The attack is slightly effervescent and mild when the lees are involved. The nose is well-balanced with a refreshing sourness like apples and sweet and bitter bourbon barrel aroma with a sense of caramel*. This has a very nice lingering bitterness*. I tasted it in the morning and pondered what would go well with it, and ended up with smoked cheese, anchovy mayonnaise, vegetables, and coarsely ground sausage. The smoked cheese was good because the bitterness and smokiness matched. The anchovy mayonnaise itself was good, but if you ask me if it matched, it didn't feel right. Meat like sausage goes well with it*.

I've been at my current job for a year now, and I'm thankful that things are going well*. It came in a wooden box and was kept in the coffin with the purple cloth that came with it. Aged one year The color is very pale. It is very light in color, maybe a little tinted. It has gold leaf in it and it is dancing in the glass. The aroma has a very light melon and alcohol taste. It is dry and the aroma is light with a strong sense of freshness. The aftertaste is also short and good as a wash*. I thought it would go well with sashimi, so I prepared flatfish and squid to pair with it. I thought it would be good with sashimi, so I prepared some flounder and squid to go with it. Shinshu Kamerei Junmai Ginjo Yamae Nishiki Mari Label Thanks to Takeshon, I managed to get this Shinshu Kamerei! It has been a long time. I had the impression that it had become very popular, so I didn't have a chance to taste it because it was hard to get. The aroma is like pineapple or apple. The sweet and sour taste with a sense of freshness gently spreads on the palate, and after a little while, a sense of richness appears. However, the aroma is rather lively. Even when it is warmed up, neither alcohol nor bitterness comes out, and the impression is that the balance of the sweet and sour taste is maintained. The aftertaste is light with a little bit of richness. The aroma is high, and if it is well-balanced, it is sure to be popular* It seemed to me like a stronger version of Jikin Tokujun. (Of course, I admit that I have my objections.)
