Tedorigawa sparkling dot for UA
Collaboration work of Tedorigawa and United Arrows*I didn't have time to go to UA BAR in Harajuku, so I applied for the lottery and got 2 bottles.
I remember drinking the yellow one with the dot of Tedorigawa. I remember I drank a yellow one of Tetorigawa Dot. It was a Yamahai with the specs of secondary fermentation in the bottle. This time, it was a Kijoshu, Yamahai with secondary fermentation in the bottle.
I was expecting it to be sweet, with a moderate acidity, and a little bit of a shwashy taste, which would be very enjoyable.
As expected, it has the acidity of Yamahai, the sweetness of Kijo-shu, and the sizzle of Kijo-shu. However, it was not as sweet as I had expected, and as a kijo sake, it seemed light. I thought it would be sweeter and heavier.
The enclosed letter said, "I think it would go well with curry and spicy dishes," so I paired it with mapo tofu. Since the acidity is derived from lactic acid, I felt that it mildens the spiciness and the sweetness of the lees matches the feeling of the sansho*.
