Out of season series* I got this one for Christmas last year, and ended up drinking other sake for Christmas and forgot about it*.
Sentori ✖️Collaboration work by Marie Chiba, featuring Sentori made in 2017, soaked in bourbon barrels, and assembled with new sake from 2021, which is her specialty* The label is illustrated by Marie Chiba, which is very tasteful*.
The nose is apple, caramel, and a light Shaoxing wine flavor.
The attack is slightly effervescent and mild when the lees are involved.
The nose is well-balanced with a refreshing sourness like apples and sweet and bitter bourbon barrel aroma with a sense of caramel*.
This has a very nice lingering bitterness*.
I tasted it in the morning and pondered what would go well with it, and ended up with smoked cheese, anchovy mayonnaise, vegetables, and coarsely ground sausage. The smoked cheese was good because the bitterness and smokiness matched. The anchovy mayonnaise itself was good, but if you ask me if it matched, it didn't feel right. Meat like sausage goes well with it*.
