The nose has fresh citrus and green apple nuances. The taste has a beautiful acidity and a fruity quality that does not contradict the aroma. The sugar content is low and the taste is clean and crisp.
This is also a perfect sake for sushi restaurants.
The balance is similar to that of the earlier Hidakami, but the acidity is a little higher in Hidakami. Both are so good with sushi that I cannot stop drinking them.
