It has been a while since we have had "Tenmei". As the name suggests, it has a very smooth, crisp, and refreshing taste, just like a summer sake, but it also has a strong rice flavor. Today we enjoyed our home-made "Hamo no otoshi" (pike conger eel) and Spanish mackerel sashimi 🍶😊.

My son gave it to me as an early birthday present. It is a tremendous surprise gift. I immediately opened my mouth and enjoyed it. It didn't have that much of an aroma, but when I put it in my mouth, I was satisfied as I expected with the slight effervescence and the refreshing sensation that passed through my nose. If I had to guess, I would say it was more like champagne. It is also very smooth on the palate, so instead of my son who cannot drink, my son-in-law and I finished it in no time at all. 😄🍶

This is the first sake from Ibaraki Prefecture. It has a bubbly taste unique to nama-shu. It is very light on the palate and has a Junmai Daiginjo-like flavor. Personally, I think it might be just right for an aperitif. Because it is so light on the palate, I feel as if I would drink too much of it. It is a delicious sake.

The mouthfeel is light and fizzy. It has the feeling of being positioned opposite to the "Kaze no Mori ALPHA1" that we drank earlier. It is dry and has a taste that does not linger. I think this one is better as a food sake.

It is firm and dry. When served cold, it has a slightly peculiar taste, and a bitterness comes later, but when served warm, it is a dry and delicious sake with a refreshing sharpness. It is a bit like a milder version of "Katori" from Chiba Prefecture, which I drank before. I think it is quite a deep-flavored sake.

It has a mild mouthfeel. However, the fizzy sensation characteristic of nama-shu comes through clearly. After that, it disappears quickly, and the aftertaste is clean and crisp. I bought it in a set with "Tare Kuchi". It is slightly yellowish in color, and has a soft and mellow taste like Fushimi sake. It is the opposite of the "tare kuchi" we drank earlier. I think it is a sake recommended for women.

The opening of 2022 began with the sacredness of my hometown of Fushimi, Kyoto. It is a seasonal sake with a slightly high alcohol content of 19 degrees, so naturally we paired it with Osechi (Japanese New Year's dishes). The sake is unpasteurized, which gives it a faintly effervescent and fresh taste. I drank it all the next day before it lost its freshness.

It has a light and dry taste, but it is not sharp and gentle, and it goes down your throat easily. It was sold at a department store by chance, and I bought it because I didn't know the brand at all, but it was a good decision. The taste is the opposite of "Kinshimasamune" which I drank before this. I had it as a side dish with sashimi of horse mackerel and it went well with it. 😊.
