The aroma is not so strong, but the sharp flavor spreads in the mouth and quickly disappears down the throat with a sharp taste. I served it with mackerel sushi from Izushige in Gion, Kyoto, which had a lot of fat on it, and it washed away the fat from the fish nicely. It has been a while since I had a good, crisp sake.
