The sixth brewery in Chiba Prefecture is one of my favorites, Kangiku Meikozo in Yamatake City🥰. We were served Identity- So no Mai 50 from the Discovery series 😘. I wanted to buy all 4 bottles, but my pocketbook was sad. This 🍶 is on the brewery's website, We feel that this annual effort is steadily improving the quality of our sake, as we were the first to win a prize at the National New Sake Competition this year (2025) for the Junmai standard (Silver Lining) for So no Mai rice produced in Chiba Prefecture. So this year's guess is So no Mai with a yellow label. and we chose the yellow label🤩. Is this really 🍶? Sweet and sour juicy, rice flavor in the aftertaste, very delicious 🍶 ☺️ Alcohol : 14 Sake degree : -5 Acidity: 1.6 Amino acidity: 0.9 Rice used: 80% So-no-Mai produced in Chiba Prefecture Rice polishing ratio: 50

A gift from my daughter 🎁. This is the first time I've had tani-sen: ☺️ When I hear of Tsuruno Sake Brewery that brews Tanisen, I remember staying at a drive-in near Ukawa station to visit the grave before the Noto Line of the Noto Railway was still closed 🫠. This is a collaboration with Tenryohai Brewery on Sado Island as part of the Noto Peninsula Earthquake Reconstruction Assistance Joint Brewing Project [Part 4] 🤗. The aroma is slightly muscat-like. The taste is first sourness, then rice flavor, then sweetness, and finally acidity. Not too sweet, very easy to drink and delicious 🍶😋. Ingredients : Rice (domestic) Rice Koji (domestic rice) Yeast : Kanazawa yeast Rice Polishing Ratio : 55 Alcohol : 13.5

I don't know if my nose is bad, but I don't detect any aroma. Fruity flavor, but not too sweet, just right 🥰. Delicious 🍶 as it is reputed to be. I've read on a few websites that it's more dry 🍶, but as an amateur sake drinker, it's a little sweeter and easier to drink for me 😅. Maybe because I don't compare 🍶 drinks very often, I can't describe the difference in taste and flavor well 😭. The autumn bugs have started to sing, but it's still hot out, so we opened a bottle of Yamasan Sparkling 😄. As usual, I first had it with just 🍶😄Already soda water💦but the bitterness followed 😱. When served with the autumn fish 🐟, the bitterness of the 🍶 goes away and turns into an easy drinking 🍶 😊. Sparkling sake is like a juice, but this 🍶 is a food wine 🍶. It was delicious 🥰. Alcohol content: 15 degrees Celsius Rice polishing ratio: 55 Rice: Yamae-Nishiki 100% Nagano Prefecture

It's the 🍶 of the liquor store's hanpukai! This is my first time to try Takihama 😀. It is the first 80% polished rice 🍶 and when served cold, it tastes more like rice umami🌾 than sweetness and acidity. It has a slight bitterness that finishes off after the sweetness and acidity 🤔. When served warmed, the sourness changes to a sour taste when lukewarm 😱. I think it settles down when it's hot 😉 (personal opinion) (This is my personal opinion) Alcohol content: 16%. Polishing ratio: 80 Rice used: 100% Kaminoho rice produced in Mie Prefecture Yeast used: Home-bred yeast in the brewery Sake degree: +5 Acidity: 1.5 4 days after opening the bottle The sweetness has increased, and it seems to have turned into a delicious 🍶 even when chilled.

There was no brewery or sake name registered at Sake-no-Wa 😭 The fifth local Chiba brewery, Iida Honke in Katori City, gave us their Ohime Junmai Sake 🤗. I bought it in May at the brewery and kept it at room temperature to warm up during the cold rainy season, but the cold rainy season never came, so today I had it at room temperature 😋. No smell, clear and colorless. It was a little sour with a hint of umami rather than sourness 🤔. I'll have it warmed up next time 😅 Alcohol level: 15 degrees Polishing ratio: 60 The 2nd day after opening the bottle Today we had it warmed up 😚 First it was warmed up to lukewarm. First it was warmed to lukewarm, the acidity was more pronounced with a slight sweetness, better than room temperature. ☺️ Next, hot sake, more acidity and umami: ☺️ Very tasty😍!

I enjoyed it so much last year that I am happy to repeat it this year 🥰. It has a pleasant popping sound and a good balance of sweet, tasty, sour and bitter 🍶😋. I think the sweetness and bitterness is a little stronger than last year 🤔. Very easy to drink, be careful not to drink too much... 😅

The fourth brewery in Chiba is Fudo by Nabaten 😄. The bottle had the tag ⚠️ down, so I chilled it well in the fridge before opening it 😅. The supernatant is a non-sweet cider, the cider taste seems a bit weaker after mixing the oli 🤔. It was refreshing and easy to drink 🍶 but personally, I would have liked a little sweetness 😋. Alcohol content: 14 degrees Celsius Sake degree: -12 Acidity: 5.1 Rice polishing ratio: 70 Rice: Miyamanishiki produced in Akita Prefecture, etc. Yeast used: Association 77 (apple acid yeast) From the brewer's website

It's a liquor store's hanpukai 🍶. This is the first time I've had Chiyomitsu! It was sweet 🍶, like honey 🍯, like sugar water 🤕. Personally, I think it would be better if it had a sour taste 🤔. I think it would be good to mix it with carbonated water, but I can't figure out the ratio 😰. Just my personal opinion. This is my first 🍶 at Tenranzan too😊. Sourness and umami, then a slight bitterness 👅. It's a strong, dark sake, not strong enough for me, I get drunk easily 😅. It's been a hot day, so I thought a low-alcohol sweet and tasty 🍶 is good, but also a good hara-sake 🍶 ☺️ Alcohol content: 17%. The third brewery in Chiba Prefecture is Koshi Summer Pilgrimage Sake Hoshiai by Iinuma Honke of Sakai-cho: ⭐️ This special sake is served only after the "Kayanowokuri" or visit to the shrine on June 30 to purge the impurities of the past six months and pray for peace in the remaining months of the year 🤔. It is very easy to drink with only a hint of bitterness and not too sweet 🤗. Alcohol content: 16%. Sake degree: -7.7 Acidity: 2.3 Rice: 50% Yamadanishiki from Hyogo Prefecture Kake rice: 58% Miyamanishiki produced in Yamagata Prefecture

This is other brewed sake by Pukupuku Brewing. It is characterized by its hop aroma and strong acidity😙. It is easy to drink with low alcohol content, perfect for this hot season, and as the name suggests, you can drink it like a beer 😊. Father's Day gift from my wife 🎁. She chose it because of the pretty pink label😊. Slight sweetness and strong acidity, it is easy to drink even at room temperature 😋. 300ml was gone in no time😅 Thank you very much 😭

Not a sake🍶 post, but... I saw a post on Igarashi Shuzo's FB about preparing 1,000 kg of plums to be made into Umeshu (plum wine) and I couldn't resist 😁. This plum wine is made with plums from Echigo, famous for its plum groves, and brewed with 100% sake 🤗. It has a rich flavor and according to the brewery's website, it can be drunk with hot water and sorbet is also recommended, but this time of year, soda is also good 😄. I drink too much ⚠️ Alcohol content: 10 degrees Celsius

I bought this 🍶 at the brewery festival. I wasn't a fan of the alky 🍶, but still, to drink it on its own... The first sip has a sweet taste, but then the indescribable bad taste follows 😢.
