The other day on our "Minami-Boso Binge Drinking and Eating Trip" we stopped by the Mori Sake Brewery...a quaint little brewery in the mountains...and bought a bottle of "Tobitsuru" at the brewery...orthodox classical sake 🍶 aroma...mamoromi aroma? I wonder if it's the mash? I think the bitterness on the palate is a little bit bothersome...but I guess it's possible to drink it as a food sake...I'm sipping it with a side of grilled eel...

It has a traditional, old-fashioned taste, but very refreshing and relatively high acidity.
Well-balanced and not boring to drink, it could be served with anything, whether as a mid-meal drink or an evening drink. ‼️
Local sake from Kimitsu, Chiba. I was surprised to find such a delicious sake in Kimitsu. It is a well-balanced sake and a good sake to drink with sashimi.

This is a very good sake. I'm not sure if I'll be repeating this 😅 but it's nice to be able to buy the sake you like 😆 I bought a bottle of Higashinada that day ✨.

It is written "Tobitsuru" and read "Tobitsuru". We bought it at a roadside station on the way back from golf in Chiba.
The rice is "Fusakogane produced in Kamibouda, Chiba".
Fusakogane is used by the brewery of Seisen in Chiba Prefecture, but it is quite delicious. How is it here?

The moment I put it in my mouth, I had a disappointing feeling.
It is a gooey sweet smell sake common in Chiba prefecture. It has a habit like a sweetpotato shochu liqueur. It is not clear. There is a faint acidity.
We think it is suitable to warm it up.

When I let my wife drink it, she said it was a stinky sake.
I drank it while checking. This sake rice is naturally dried, which means that the rice is slowly dried at room temperature over a long period of time. Because it is not dried by machine, the rice becomes moist and fluffy. It's also called "Hazekake rice". Maihime and Kaze no Mori also seem to use this method.
It's unclear if this method is used for sake.
