for recording The first case which I found by searching and entered secretly. (The reason why Japanese is strange is because I'm drunk. I had a bowl of sashimi, kimpira gobo (burdock root) and potato salad. After picking up ginan, I had my second drink. What should I drink until Yakitori comes? Out of the three kinds of sake available at the restaurant, I ordered "Banzuiin Chobei," which is the name of the restaurant. It was recommended to be served lukewarm, so I ordered it. It's a pure rice sake with a crispy, firm texture. It has sweetness, umami, a moderately bitter acidity, and a ginjo aroma. It's a little sweet, but it's perfect for Yakitori. Yagen, thigh meat, negi rolls and hatsu. Enjoy a quick drink and feel good. We added kashira, tsukune, chicken skin, and yagen. By the manager's mistake, I accidentally got another hatsu. In a short time, we had a total of 4 cups. We ate and drank a lot, thanks for the meal. Then we disappeared to the local bar again...

The sweetness and umami of the rice is also very apparent, but the aroma is faint. Is this what wine yeast fermentation is all about? They don't have many kinds of sake, but the motsu tofu and kyo dashi oden (yuba in the photo) that they serve go well with sake. It's so good that it makes me want to make a heart mark...well, that's a bit of an exaggeration. Among the sake in the shop, Ginban Banshu is my favorite. It has a strong sourness, a slightly astringent dry taste, and a refreshing taste. The sweetness is slight. Although it has a strong feeling, it has a stronger "sake" feeling than rice. It is a sake that you can choose to drink with. I drank about 4 cups. It's best to leave when you haven't had enough. We wanted to try sashimi and grilled fish, but unfortunately there was none on the menu. But the motsu tofu is worth a try. Please visit ......... when the time is over. This is a shop that I've been interested in for a while. I looked at it as I was passing by, and thought, "There is a cute girl on the staff. We started with Nanada. It's not a standard junmai sake, but the label and the name are full of glitter (lol). It's a sake from Saga. It is a sake from Saga. But then the sourness comes unexpectedly. I'm sure the sour taste comes out from the strong fermentation of the sake in the warm place. It reminds me of sweet and sour taste that I don't want. I wonder if there are many seasonal or limited edition sake instead of the standard labels. The price of 100ml (a little more than 5 stones) is the same as about 1gou at other stores... It's a bit of a pain for a drunkard. The snacks are moderate. There are mainly yakitori, but instead of sashimi, there are uruka, salted fish, and other "tsumami" as we know them. Maybe it's the times, but it's a shame that the clientele don't come here to drink sake, but instead for the sake of the izakaya. I'll see if there's a gap... and get drunk again.

I'll tell you a little story about last night. We had dinner at the office on time. So I drained the water and salted it as usual, and prepared for a drink. We also had some Gouda cheese, so we were in a good mood and relieved our stress. Kikuhide. A sake from Nagano prefecture. I think it's called Junmai-shu (I forgot to take a picture of the label on the bottom of the bottle). This time we'll drink it cold. It has a refreshing aroma with a hint of green apple. The sweetness of the rice is clear and crisp. There is no bitterness or astringency. It has a good amount of umami. There is a slight sourness...or is it the aroma? In a good sense, it is a sake that is not like Nagano...is it? It is like a refined version of the sweet rice sake of Tohoku. It's perfect with sea bream! Cheese is one more thing I feel is a waste. It's not to everyone's taste, but it's a delicious sake. If you can drink amazake but don't like sake, this might be good for you.

Holiday. These days are stressful, so I thought it would be nice to have a little luxury at home. Oyster nabe and hot tofu in broth. We enjoyed sake with it. This time it was "Yaemon Junmai Dry" from Fukushima prefecture. The aroma is not that strong. The sweetness of the rice is very strong. There is a hint of acidity in it. It has a faintly fruity aroma that comes through the nose. Although it is called "dry", it is not dry with astringent and bitter taste, but it has a sweet taste and a sharp feeling. It's a bit of a luxurious sake for this time's Tsumami. It is indeed a dry sake, and it is more appealing with meats, simmered dishes, and other foods with strong flavors than fish. I know it's not good to get rid of stress by eating and drinking, but this is the best way to do it. I'm going to go to the next one now that I've finished drinking.

It's the first time I've seen it, and it's called "Koko Junmaishu Ginjo Nama Genshu Shinshun Asa Shibori" from Chiba Prefecture. It's a rare sake that's squeezed first thing in the morning on Risshun (the first day of spring), and then the liquor stores go and get it so it's on the shelves! If you like it, you can buy several bottles and enjoy them over time. Since it is undiluted sake, it should be served cold. It has a slight carbonation that is unique to nama-gara-shu. Despite this, the bitterness and astringency are quite low. It has a light ginjo aroma, sweetness, and a sense of rice. I don't really like nama-gara-shu because of the bitterness and the ginjo aroma, but this is a refreshing drink. It seems to go well with tempura, stir-fries, meat, cheese, and so on. I've been using salad chicken as a side dish, lol. It might be interesting to make it frozen and ginormous! If you like unpasteurized sake, you should definitely try it. If you've never had it before, or you don't like it, you might want to give it a try.

I think I forgot to turn off the electric heater (which turned out to be a fan) in the office! I responded to the voice of the boss's sister, and went back to the office. I went back to the restaurant where the assistant manager's girl was in full rotation before. It was a little calmer today, so I went in a little more relaxed. I had a half-gallon of lukewarm sake and a half-gallon of hiya (room temperature) sake called "Arando". Naru-heated sake: the aroma of sake is high, and the flavor of the rice is sweet. We went to the second oden shop because we were not satisfied with Dotepara. I thought they had "Tobiroki", so I asked for a lukewarm sake. ...unfiltered, unpasteurized sake. It's not supposed to be heated up! Well, it's good in its own way. If you heat up unfiltered sake, the bitterness, astringency, and rustiness of the koji will stick to your nose and tongue a bit (^_^;) The first course was oysters and chicken steamed in a clay pot.
