I didn't drink enough like that, and I had a bottle on hand.
It's the first time I've seen it, and it's called "Koko Junmaishu Ginjo Nama Genshu Shinshun Asa Shibori" from Chiba Prefecture.
It's a rare sake that's squeezed first thing in the morning on Risshun (the first day of spring), and then the liquor stores go and get it so it's on the shelves!
If you like it, you can buy several bottles and enjoy them over time.
Since it is undiluted sake, it should be served cold.
It has a slight carbonation that is unique to nama-gara-shu.
Despite this, the bitterness and astringency are quite low.
It has a light ginjo aroma, sweetness, and a sense of rice.
I don't really like nama-gara-shu because of the bitterness and the ginjo aroma, but this is a refreshing drink.
It seems to go well with tempura, stir-fries, meat, cheese, and so on.
I've been using salad chicken as a side dish, lol.
It might be interesting to make it frozen and ginormous!
If you like unpasteurized sake, you should definitely try it.
If you've never had it before, or you don't like it, you might want to give it a try.
