Home drinking. This is a dry sake for the Year of the Ox from Hachinohe Sake, and is used in full quantity. A refreshing pineapple with tropical fruit and sweet and sour aromas, a clean and light mouthfeel of melon and sweetness gurgles in the mouth, turning to a sweet rice flavor on the mid-palate and a long finish.

This is my favorite Hakutsuru 🍶. The black bottle with navy blue label is kind of cool 🥰. It is sold only in Aomori. The first aroma is slightly sweet. The palate has a full-bodied sweet flavor that is typical of Hanafukuyuki. It has a beautiful mouthfeel, partly due to the 50% polishing. The sharpness is not bad either. I want to buy a bottle next year and drink it carefully 🤔.

Paid tasting, a bit expensive at 400 yen, but the surprising ginjo aroma, muscat-like taste and gentle flavor were delicious. It was nice to see replicas of the display of colored papers of successive prime ministers pasted on the wall, showing their individuality. A web search revealed that Fukubito is I found on the Web that Fukubito was the first sake brewery in Japan established in 1917 as a joint-stock company by investment from sake brewing companies mainly in western Japan.

Purchased during a visit to a brewery in Saijo, Hiroshima. When the bottle was opened, it smelled a little like magic ink. It tastes sweet like white sugar and has a relaxing flavor. It was different from the tasting. It tastes good, but... On the second day, it tastes just like I tasted it at the brewery. It is delicious with well-balanced flavor 😊.

Hatsuzakura Junmai Ginjyo Unfiltered Nama Sake This is not "Hatsuzakura" from Yasui Shuzo Brewery in Shiga Prefecture, nor "Noto Hatsuzakura" from Sakurada Shuzo in Ishikawa Prefecture, but "Hatsuzakura" from Hatsuzakura Shuzo in Wakayama Prefecture. It is served cold. The color is clear and the yellow color is clearly visible. The top-tasting aroma is slightly caramelized first, followed by alcohol aroma. The mouthfeel is voluminous with a juicy acidity. The nose is filled with aromas of dried fruits and ripe fruits. The mouth is filled with a nutty flavor and a hint of sweetness, followed by a slightly strong acidity. After swallowing, a bitter taste remains on the tongue, followed by a slightly pungent aftertaste. It has a slightly classical flavor, but it has the volume of a draft sake and is very drinkable. On the second day after opening the bottle, the nuttiness subsides a bit, the acidity settles down, and a brown sugar-like richness emerges, making it extremely delicious. Today in Tokyo, it snowed and turned a little white. And today, February 5, is "nigori no hi (day of nigori). If so, here it is, although it is not a white nigori. It is a low-alcohol (11 degrees Celsius) pink nigori sake. The bottle was opened easily without any bumps and bruises. Pour it into a glass with a dokudoku, or sloshing. Second stop on the Takayama sake brewery tour. We visited Funasaka Sake Brewery. As usual, the tasting machine took care of us. I chose a junmai ginjo that seemed to suit me from the description. It was described as sweet, but I got the impression that it was medium sweet with no fruity taste. I wonder if it would be a sweet sake in this brewery's lineup? It tasted crisp.

The first Toyoshu in a long time is a pure rice sake brewed with the Yamanokami yeast derived from sasayuri (a kind of lily of the valley) that blooms in the sacred grounds of the Ogami Shrine, a sacred place for sake. If you are a sake drinker in Nara, you must try this 😁. Perhaps it was because I was used to light and fruity junmai sake, but it was alcoholic, not too sweet, and had a firm mouthfeel. But it has a modern feel and is easy to drink. Yamano kami yeast was surprisingly not peculiar 🤔. Thank you for the food 🙏. I think I'll go visit Ookami shrine ⛩ again.

Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!
