Opened March 17, 2025 Purchased after tasting at Tateshina and Za Already an exquisite ‼️ What is this, too elegant sweetness and softness ^ ^. The subtle acidity has the freshness of strawberries and loquat ^ ^. This sake is made with the finest rice from a contract farmer. I hear it is a rare sake that is hard to find.

Opened March 12, 2025 Seasonal, I slipped into the brewery just before business hours and bought it ^ ^. The regular one is good, but I knew it was a seasonal one ☃️ Kamisumi is more refreshing than I expected ✨. It's spicy, but has a gentle sake lees flavor and sweetness ^ ^. Nigori-nagashi doubles the tenderness of the sake lees! The finish is faint bitterness ^ ^. A great accent! Yum!

Acid and sweetness! If it's this rich, maybe it can be used for strong flavored food like simmered dishes or meat dishes!

Opened February 23, 2025 Shuban Shuzo Brewery Purchased after tasting at the brewery I'll have it warmed up 🍶. It has a traditional feel, but with the nostalgic atmosphere of the sweet, sweet sake I used to drink at my grandpa's house ^ ^. I was attracted by the nostalgia and bought a 300ml bottle. I liked the friendly brewer's light-hearted conversation with the customers 😆.

Very soft ☺️ moist and mellow sweetness 😊. I'm not sure if it's a good idea to buy a new one, but it's a good idea! The lingering aftertaste after finishing the bottle is also gentle sweetness and also favorable 😁. This is good 😋!

The slight bitterness accentuates the taste, but the gentle sweetness and body is not even Junmai. Bought it at a liquor store run by a contract farmer, also quite good 😁.

Opened January 28, 2025 Purchased after tasting at the brewery's direct sales store Brewed with rice from Yaehara, it was an unconditional purchase. Rather spicy ^ ^something refreshing! But it is quite full-bodied and has a great depth of flavor. ❗️ I knew it would be Saku-no-Hana. No doubt. ☺️

Good sweet and sour aroma fills the mouth ☺️ Taste is similar to the aroma, with a refreshing citrus-like acidity and a fruity sweetness🍊. I bought it without being able to taste it, but it's so hit and miss 🎯.
