Wakayama Pref. Ito District. Hatsuzakura Sake Brewery Co. Hatsuzakura Junmai Ginjyo Unfiltered Nama Sake This is not "Hatsuzakura" from Yasui Shuzo Brewery in Shiga Prefecture, nor "Noto Hatsuzakura" from Sakurada Shuzo in Ishikawa Prefecture, but "Hatsuzakura" from Hatsuzakura Shuzo in Wakayama Prefecture. It is served cold. The color is clear and the yellow color is clearly visible. The top-tasting aroma is slightly caramelized first, followed by alcohol aroma. The mouthfeel is voluminous with a juicy acidity. The nose is filled with aromas of dried fruits and ripe fruits. The mouth is filled with a nutty flavor and a hint of sweetness, followed by a slightly strong acidity. After swallowing, a bitter taste remains on the tongue, followed by a slightly pungent aftertaste. It has a slightly classical flavor, but it has the volume of a draft sake and is very drinkable. On the second day after opening the bottle, the nuttiness subsides a bit, the acidity settles down, and a brown sugar-like richness emerges, making it extremely delicious.
