The first Toyoshu in a long time is a pure rice sake brewed with the Yamanokami yeast derived from sasayuri (a kind of lily of the valley) that blooms in the sacred grounds of the Ogami Shrine, a sacred place for sake. If you are a sake drinker in Nara, you must try this 😁. Perhaps it was because I was used to light and fruity junmai sake, but it was alcoholic, not too sweet, and had a firm mouthfeel. But it has a modern feel and is easy to drink. Yamano kami yeast was surprisingly not peculiar 🤔. Thank you for the food 🙏. I think I'll go visit Ookami shrine ⛩ again.

It's finally New Year's Eve! For the first time this year, I was able to participate in "Sake-no-Wa" and it was fun and I learned a lot. Thank you very much😊. Now, we are having a limited edition sake that was just pressed this morning. Fresh, crisp, umami, delicious! It's going to be a good New Year's Eve 😋.

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. As the day goes by, the acidity will become more rounded and a sense of unity will emerge.

First time drinking out in a while We started with Reijin 😆. It's called "Reijin Dry Goku" and it's as light and dry as you'd expect 🤗. As a lover of sweet and savory, I don't usually drink it, but it was perfect with the grilled meat I paired it with 🥰.

At the tasting. I had been curious about Reijin for a while, so I tasted it with the intention of buying it, but I couldn't find anything that stuck out to me so I didn't buy it. It was fresh and fruity, but it tasted like a common taste.... I would like to try it if there are other specs. The brewer was also very reluctant.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.
