The first Toyoshu in a long time is a pure rice sake brewed with the Yamanokami yeast derived from sasayuri (a kind of lily of the valley) that blooms in the sacred grounds of the Ogami Shrine, a sacred place for sake.
If you are a sake drinker in Nara, you must try this 😁.
Perhaps it was because I was used to light and fruity junmai sake, but it was alcoholic, not too sweet, and had a firm mouthfeel.
But it has a modern feel and is easy to drink.
Yamano kami yeast was surprisingly not peculiar 🤔.
