Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

It is a sake named after a place in Gosho City, Nara Prefecture, where Chiyo Sake Brewery is located. Like Kushira, Gosho is a town with many difficult-to-read place names. For example, Bunze, Iuka, and Saragi. Gosho is a nice and peaceful place nestled in the bosom of the Katsuragi and Kongo mountains. Aburanaga-san of Kaze no Mori is also a sake brewer in Gosho. I guess it's a good place for sake brewing😋. It's been a while since I've had a Kushira, but it's dry and full of rice flavor. It's delicious 😆. I would like everyone to try it along with Chiyo's other brand "Shinomine" 👍.

Shinomine's terroir brand Kushira✨. I bought two kinds of Shinomine's summer sake, so I have no choice but to give you a first look🤣. The aroma is slightly sweet. The aroma is slightly sweet, but when you put it in your mouth, it has a delicious taste of rice and then it snaps! It's also got a good amount of gas, which adds to the sharpness😆. It's an unfiltered unpasteurized sake, but it's quite light✨. I think it's a great food sake that goes well with any Japanese, Western, or Chinese food✨.

Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

I've been curious about this for a while, but this is my first time in Beian Daikoku. The rice is Hitogokochi, though it is not written on the label. Juicy sweet flavor. It is juicy, sweet, and delicious. It is fruity but not too fruity. It is not flashy, but it has a gentle taste that you will not get tired of drinking. At home. Nara Sake without permission, 12th stage ~‼️ Kubo Honke, a long-established sake brewery in Uda City, Nara Prefecture ~ ‼️ Hatsukasumi and this Soriryu are famous brands. The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. We used to pass by the brewery we visited this time, but this is the first time we visited there. It is called "Sake Brewery Street," but it is really a quiet street. And the taste of the sake.... There is not much aroma, and although you can feel the alcohol in your mouth, the dryness is not so high and the sake is easy to drink. I imagined it would be a dry sake for the experts because it is from a long-established sake brewery, but to my surprise, it is moderately drunk and has a refreshing taste. I bought this sake on my Nagano expedition! I was curious about it because of your post. But there is no special distributor in my neighborhood 😭. As per the rumors? Just as you posted! Freshly brewed with Miyamanishiki from Nagano Prefecture. I'm not sure what to make of it, but I'm sure it'll be good. The color is milky white. The smell is mild, with a hint of flowers. The taste is fruity, but not too sweet. It has a nice umami taste with a slight sourness and bitterness in the aftertaste. You can feel the alcohol quite a bit, it's 17 degrees, so it's thick. It is easy to drink on the rocks with ice. I think it tastes better if you drink it this way. It has a refreshing, dry, gassy flavor that pairs well with 🍖 meat dishes and Chinese and other oily dishes 😋~.

Tonight, we will finally enjoy a very tasty "Shiuchu" and another brand "Hiroki" spring sake from the same brewery 🤗. This is the first time I've heard of a brewing method called "sanki amazakamoto". It is said to be a technique to bring out the flavor of the rice. The aroma and taste are gentle and slightly lactic, but there is none of the wildness of the traditional sake, and the sweetness and umami of the rice spreads throughout the mouth, making it easy to drink and delicious 😋😋😋😋😋. This brewery is of a very high level, including Purple Space👍.
