The same fruity aroma as the top rise, with a hint of amazake, a modest sweetness and a full rice flavor that spreads with a soft acidity, and a slight bitterness that is slightly bitter and finishes quickly.
The sweetness and aroma are modest, but the umami of the rice can be felt, and the slightly bitter aftertaste in the second half gives it a crisp finish.
A recipe from "Gohan for Men," meat tofu with barbecue sauce - went well with white fish in fish sauce milky soup and yellowtail sashimi!
It also went well with pasta with sea chicken and salted kelp and 7-Eleven's basil pizza, which Masa-san taught me!

There is also a Nabeshima brewery on the side of Mitsutake, so it is worth going to the brewery opening ^o^.

The president of the company is friends with the director of Fist of the North Star, and this collaboration, following the shochu, was inspired by the 333rd anniversary of Mitsutake Brewery in 2021.

I found this spring sake at a regular liquor store the other day.
It has a fruity aroma that is typical of spring, and the sourness and sweetness come in and are cut off by the spiciness.
It tastes like white wine.
When paired with yakitori, sashimi, and side dishes, it brings out the flavor nicely.
