Iraka Silver & Ai Nama Sake Rating 4.5 Rice: contract-grown rice from Matsukawa-mura, Kitaazumi-gun, Nagano Prefecture (specially grown rice); Alcohol: 15%. The second version of Iraka is made with a 25-year-old yeast that was revived from a -80°C freezer. Grapefruit and white peach-like aromas simply spread and harmonize with the flavor, enveloping the body and leading to a straight line to the goal. At a time when "alps yeast" produced in the same Nagano Prefecture was famous as an aromatic yeast, and it was said that one could not win a prize at the New Sake Competition without using this yeast, this yeast was derived from the "alps yeast" and successfully put to practical use by Mr. Tanaka. Its aroma harmonizes with the flavor, wraps around the body, enhances the taste, and leads to the goal in a straight line.
