Tonight, I'm back at work after GW, but naturally I'm not very excited 🥴. This one is brewed with Dewa Sanzu and Kyokai No. 6 yeast. The aroma is mild without being showy. It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When I poured a glass of chilled sake, it had the usual mild uri aroma, a beautiful acidity, a little sweetness and citrusy flavor like Pocari, and the second half was a mix of astringent, bitter, and spicy flavors. Buy at Asahikawa Marushin Shoten The rice used is Yumesasara from Tochigi prefecture. This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.

A year ago, we heard the shocking news that the Furuya Sake Brewery in Saku, Nagano Prefecture was destroyed by fire. 🐰💦. I bought Furuya's sake as part of a project called "Saku Wakate 13 Sake Breweries Drinking Comparison" at a time when sake consumption was in the doldrums due to the Corona disaster, and the label was beautiful 🌸✨It was my favorite sake, so the news of the fire broke my heart. I went to a liquor store for the first time in about a year and found a sake labeled "Fukayamazakura" at ❗️ I was surprised and picked it up to find that it was brewed with rice that survived the fire at Kurosawa Sake Brewery, also in Saku. The specs were Acl15, a fire-aged junmai ginjo brewed with 59% polished rice from Hitogokochi grown in Nagano Prefecture. The impression is that it is not too sweet, not too spicy, not too much aroma, and clean, well-balanced, and easy-to-drink food sake✨. However, the lingering taste left a depth, if not a sense of maturity. It was as if that depth was the depth of thought that went into brewing this sake. If you see it at a liquor store, please support and purchase 🐰💓. Finally, thank you Kurosawa Sake Brewery. I know it must be really tough for everyone at Furuya Brewery, but please take care of yourselves. I am looking forward to seeing your sake again while supporting you from the shadows!
