Buy at Asahikawa Marushin Shoten The rice used is Yumesasara from Tochigi prefecture. It is a low alcohol type, but it has a moderate sweetness, and as expected from an unpasteurized sake, it has a crisp taste. The acidity is also a bit like white wine, so it can be used with western food. It is an all-round food sake. It is the first time to drink Sawahime, so it is difficult to evaluate only this one, but it is an interesting brewery!

It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. I can't seem to name the rice, but I wonder if it is Hidahomare or some other rice that is only available in Gifu. I heard that if you mention the name of the rice, you will get complaints like Kamerei did in Hiroshima, but if you don't mention the name, it's OK.

Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. It is delicious.

Purchased at Sake-no-Oyama in Joetsu City in July. I rescued a spring sake that was left behind in the summer. I don't usually drink this brewery, but I picked it up because it is made from 100% Koshitanrei sake produced in Kakizaki. Pouring it into a glass, I noticed that it was slightly colored. The top rise is gentle, but the aroma is of rich rice. Perhaps it is because it was bottled in February, but it seems to have become richer than the original flavor with the passage of time, though not as much as the matured aroma. When you drink it, it has a robust Koshitanrei flavor! There is almost no sweetness, and you can feel the rice straight away. The passage of time also gives the impression that the umami has increased. The alcohol-derived acidity tightens the overall flavor. Since it is unfiltered, it is fresh and easy to drink. When asked what the umami of rice tastes like, this sake is the first to answer. I would like to be the first to offer this sake when asked what the umami of rice tastes like. It is not just sweet and tasty, but tasty and delicious. I have found the next best Koshitanrei sake after Yukihonbai and Kaminari. Koshitanrei is the best!

Our annual sake party 😁 today with three of us 🌸. My friend brought me this sake from Naito Brewery in Sobue, Aichi👍. It's very light and easy to drink. It has a dry throat, but not too much acidity, and you can taste the flavor😋. It's a great sake to drink with two great drinkers and it's easy to drink like water😝.

Local brand of Kamogane. It is al-soke and has no label on it, so is it a regular sake? The taste is clearly superior to the ginjo class, with a touch of sweetness and a refreshing feeling. This was the third bottle we drank on New Year's Day. We saved the Hakurakusei we had brought for another time and opened a bottle of Okutanba provided by my sister and her husband, as we did last year. It is dry but slightly fruity and easy to drink. This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.

This is the recovery sake from the Furuya Sake Brewery, after they were devastated by a fire. They made 2,000 bottles with "Hitogokochi" rice they were just able to get from the local area. For me, it wasn't about the taste; I drank it as a local showing my support. ( It was delicious, of course!)
