Miyama cherry (Prunus maximowiczii) The aroma is mild. Soft, not too sweet, acidity comes and refreshes. Very tasty. A good combination of lightness of Furuya Sake Brewery and softness of Kurosawa Sake Brewery. It seems to be. The brewery suffered a fire at the end of last year, but I was curious to know that they had started brewing sake after that, as it was often reported in the prefectural news. It is still delicious. This sake was made as part of a project to use sake rice from the Saku area together with Kurosawa Sake Brewery, which the president and I have known each other for many years. Sake breweries in Sakuhira are united and wonderful.

#Funabori# I got the deep mountain cherry. It tastes light and fruity 🤔. This sake is said to be a reconstructed sake brewery. A 130 year old sake brewery burned down last December. With the cooperation of 13 sake breweries in Saku, the city office, and sake rice farmers The label tells us that the brewery was commissioned by Kurosawa Sake Brewery. On the label, there is a note from the president of the brewery, and the location of the brewery in Saku City. Like Noto's recovery sake, the monolithic relationship between sake breweries is wonderful. The monolithic relationship between sake breweries is wonderful. The tako is not a fussy eater.

A bottle brewed by a brewery that was destroyed by fire with the help of surrounding breweries. I didn't expect it to be restored so soon. I bought it to support them. The sweet and sour taste comes first and the aftertaste is bitter. I feel that it is a good reproduction of the taste I liked when I drank it before. I hope they will use this as a beacon of revival and do their best to rebuild.

The Furuya Sake Brewery was destroyed by fire at the end of 2024. After that, with the cooperation and support of many people, including breweries in the same city of Saku, the Saku City Agricultural Administration Division, and sake rice farmers, sake rice that survived the fire was used to brew sake on consignment at Kurosawa Sake Brewery, and now the sake has been released. Today, Furuya in Saku, Nagano Prefecture. After the sake brewery burned down in a fire, "Miyamazakura" Junmai Ginjo, Wawa, which came out of the cooperation of the various breweries in Saku,❗️ The aroma is fresh, fruity, and sweet❗️After a sip, it has a mild texture on the tongue, followed by a sharp, sibilant spiciness on the tip of the tongue❗️It is also good as a food sake⭕️

This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. It has a strong bitterness and acidity, with a tangy mouthfeel. It also has a sweetness, so it is not harsh. It is the best sake from Saku so far. It's a shame that we won't be able to taste it for a while. I hope they will do their best to bring it back.

Opened December 27, 2024 Purchased at the brewery Wow, so much better than I expected ^ ^. It has a complex and convergent taste 🍶. The ensemble of sweet, spicy and acidic flavors are well matched 🤣. I've had it in the past, but I don't remember it being this good. Aromatic, slow and steady, it's a good sake. ❗️

Special Junmai Sakusake Sekesaku Saku Sake Sake Saku, Saku Sake Saku, Saku Sake Saku was stated on the label 🥳. ⭐️⭐️⭐️⭐️ [Wawa Wawa] brewery. Using Saku yeast (yeast isolated from cosmos in Saku City) Hitokochi 100%, Polishing ratio 59%, ALC 15%. Tonight's sashimi platter is a 4-piece set of Ukka Rasago, Bonito, Shirasu, and Seared Spanish Mackerel with Salt and Lemon. Actually, this is the second type of sake I ordered today, the first was called "Orikagarami Hiran" on the store's bulletin board, but I couldn't find any orikagarami at all😅I checked and it seems that if it is unfiltered raw sake, it is orikagarami, which is a type I had already encountered but with different alcohol content, so I just had to update the information 😃. The aroma is subdued, the acidity and bitterness are well balanced, and the sake is clean, crisp, and slightly dry 😋. Yeast isolated from cosmos... but I can't really tell the difference since I don't even remember the aroma of cosmos😅 Chigasaki Chirori: 20240718
