They use F44 yeast and Fukuoka's sake rice,
Yume Ichikyo and Yamadanishiki, Fukuoka's sake rice.
It is a mellow, dry sake, and since it is summer, I had it cold, but I think it would also be good warmed.
This is a first for me even though it is a local sake. My gra wife attended an event at the brewery and bought it for me as a souvenir. It has a sweet and sour aroma. It is basically dry, but the sweetness with just the right amount of rice flavor is delicious.

I went to LaLaport Fukuoka and had a lunchtime drink as they were having a Fukuoka sake tasting 🍶I'm glad it went surprisingly well 😊This is the first sake I've ever seen ❗
The fresh taste of freshly squeezed sake is great 😋.
I also ordered a craft beer from Fukuoka, which was also delicious 😉.
Hakata Hyakunenkura Junmai Ginjo F44

I went to Hakata brewery from Tokyo. There were a lot of souvenirs and many foreigners were there.
This is the first time to drink sake from this brewery, but it gives the impression of being sweet, heavy, and guttural. It has a flavor like persimmon extract and a depth like soy sauce-based soup stock. It is sweet and spicy, sweet and strong, and has a powerful feeling of more than 15 degrees Celsius.
My wife said it has a salty taste.
It is a little too strong to keep drinking. It is best served on the rocks.
The website says that it is for "food", but I wonder if this is the taste that people in Kyushu prefer.
The label says "F44" because it uses Fukuoka's strain 44 yeast.

Not actually sure when I drank this but I’m pretty sure I drank it with Grace and Eddy. I remember it being floral and refined, not surprising considering it’s a JG!
Hakata Hyakunenkura Shiboritate Junmai-shu Namaishu 17% 70%.
Purchased at a brewery in Hakata. It was a beautiful facility with a lot of attention to detail for tourism. Many foreigners visit the brewery.
This Shiboritate Junmai sake has a strong raw sake flavor. When you put it in your mouth, you will feel lactic acidity, astringency like grape skin, and spiciness in that order.
The body is strong and very drinkable. It has a strong body and is very satisfying to drink.
The sake brewery was more solid than I expected. If I visit Fukuoka again, I will stop by.

During my recent trip to Kyushu, I had a chance to go to a brewery open house and was served 1, 3, 6, 7, 9, and a free-flowing sake and amazake, which I don't know what it was. I think I enjoyed the 3 light nigori, which is full of rice flavor, and the 9 awayura.
Perhaps because it is within walking distance from Hakata Station, and perhaps because it was a warm sunny day ahead of the season, there were so many people in the not so spacious premises that it was hard to take the time to savor the sake....
