The name "Tomikyushin" was derived from "Tomizo" of Tomizo I, "Hisa" of Wakuri, the mother of Shigenao IV, and most importantly, "Kokoro" or "heart". I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

Purchase from Okuhida Sake Brewery This sake brewery is within walking distance of Hida Kanayama Station. This time, they recommended to purchase by letter. I am a sucker for limited editions, so I bought it. The aroma is moderate and the taste is strong. It is dry with a clean aftertaste. I paired it with fried pork and cheese with tomato ketchup. This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. My parents-in-law gave me this sake as a souvenir from Tanba Sasayama. It's a completely unknown brand, so I was very nervous when I opened the bottle. Maybe it's because we've been drinking a lot of autumn sake lately, but it's surprisingly refreshing 😳 You can drink it easily without getting stuck. It has a faint sourness and a spiciness that comes afterwards, and then it goes away quickly. It's a sake made with clean water that goes well with all kinds of food. We enjoyed it with pork kimchi and horse mackerel sashimi. I want to drink it carefully, but it will probably be gone in two days☺️.
