Today is Izutsucho. Nagano was given to me as a mid-year gift from someone in Saku ✨. I wonder what it smells like, fruity aroma -> sharpness -> soft sweetness -> alcohol bitterness -> full lingering taste. Delicious. Made in March 2012, shipped in June 2013, it takes a long time. According to the official description, "This is our brewery's best sake, carefully polished with Miyamanishiki and Kinmonnishiki rice produced in Nagano Prefecture and brewed slowly during the harsh winter season, based on the concept of a Daiginjo that is unique to Nagano without relying on high-grade sake rice produced in other prefectures. Homecoming Series 13 Hitachi City, Ibaraki Prefecture is home to Shiina Sake Brewery's Fukushin. It is a pure Ibaraki local sake made from 100% Hitanishiki produced in the prefecture! The specs are a special junmai sake with a rice polishing ratio of 55%. While the aroma is subdued, the taste is a robust sake that hits the right notes of rice! The aroma has nuances of young melon and white bean flour, the acidity is not strong, and the taste is easy to drink with a medium attack and a slightly long finish. For my taste, it is my favorite type. It is too hot to warm up today, but I will add my comments on heated sake later.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. I drank it at a tasting and bought it because it tasted better than the sake labeled by Machida Sake Brewery. It is high quality for about 1,500 yen.
