Kurosawa Sake Brewery in Nagano Prefecture. It is one of my favorite sake breweries.
It is said that the sake is matured in the Yonome Dam (not underwater).

Ginjo aroma. Aroma: Apple and pineapple. Fruity aroma.
Taste
It is smooth on the palate and easy to drink fruity sake. It is easy to drink and fruity.
From the middle, the umami of rice and the spiciness of sake swell up in the mouth and nostrils.
In other words, it is "fruity and dry.
It is a very greedy taste.
I think it is in the plus range of sake.

◎I went nearby to stop by Kurosawa Shuzo, but they were closed on Sundays, so I bought a bottle of Kurosawa Shuzo "Izutsucho" Namahoshi Junmai㋣ at a nearby supermarket.
It comes in a slim 500 ml bottle, and the label, which looks like four ㋣s coming out of a gourd, has a fun atmosphere. It is said to be made from 100% Yamae-Nishiki from Nagano Prefecture.
It has a light, summery flavor, and at 12.5°, it has a bit of a rummy feel, perhaps due to the low alcohol content. It is delicious.
lesser cuckoo (Cuculus poliocephalus)
Nigori, effervescent. Slightly sweet and firm taste. Weak acidity, bitterness on the tongue. I rather like it.
The label on the back of the bottle says it is supposed to be heated to O, but I warmed it up. It was cold. It is very easy to drink, but it is not impressive. Certainly O.
Purchased at a sake brewery. Limited edition at the brewery shop.
A magnificent house. The shop is spacious and sells not only sake, but other goods as well. There is also a cafe and event space. The museum is open to the public, and you can see the old tools, sake containers, signboards, and so on. The name of the shop is said to mean "chief (osa) of a well. I had never heard of it before.
Picture 4 is a back fatty pork bone ramen with Kurosawa Sake Kasu (sake lees). It tasted like a big fight between the aroma of sake and pork bone. The collaboration between a ramen shop and a sake brewery in Saku is now being held - 2/12.
I bought it at a drugstore in Nagano. It has a strong and mild taste, with a moderate aroma and acidity. It has a clean taste with no lingering aftertaste.
Today I left home early in the morning and climbed the outer rim of Mt. Asama, one of Japan's 100 most famous mountains, from Takamine Plateau on the border of Nagano and Gunma prefectures (Mt. Asama itself is off limits to visitors due to climbing regulations).
After descending the mountain, we took a hot spring bath at Nunobiki Onsen in Komoro City while viewing Mt. Asama, and then checked into a hotel in Saku-daira.
Well, as usual, the preamble is long, but for dinner in Sakuhira, we went to "Soba Dining Uenakaya" at the north exit of Sakuhira Station.
The restaurant was quite crowded due to the Bon holidays. Despite my Type O temperament, which does not like to wait in line, I did my best to wait 20 minutes to enter the restaurant, since I had come so far and did not know when I would be able to come back next.
First, I quenched my thirst with a draft beer, and then moved on to sake. I wanted to drink Asamatake in honor of the Mt. Asama trip, but they only had a bottle of No. 4, and it was too hard for me to drink alone.
Speaking of Izutsunaga, I was personally impressed by this sake when I first drank it at a buckwheat noodle shop in the town in front of the temple when I visited Zenkoji Temple in Nagano.
The appearance is slightly brownish.
The aroma is subdued, but when you take a sip, the mildly sweet, spicy, and well-balanced mellow flavor spreads in your mouth and is pleasantly pleasant.
It went well with duck nanban soba noodles and dashimaki tamago (rolled egg).

The aroma is mild.

This is an interesting initiative! There have been examples of whiskey blends and collaborations like this, but this may be the first time I've seen this in sake.
Saku City and Ueda City Sake Brewery Event⑤.
Junmai sake stored in ice and snow. This may be the first sake stored in ice and snow! Harmony of umami and acidity. The effect of the ice and snow storage also makes it mellow. The sake brewer here is aiming for a rich, dry sake, and is also emphasizing the balance of the five tastes. This sake really is just as they say. I thought that richness and dryness might be at odds with each other, but that was not the case at all. It is rich but has a crisp aftertaste. This kind of sake is also good! I forgot to take a picture of it at this booth, but I also had a Junmai Ginjyo (Junmai Ginjo) Nama Hashiroshi. I could feel more five flavors in this one.

The first taste is dry and watery. The aroma and a slight pungency come later. The smoothness is only at the beginning, but later you can feel a slight, thickening weight. Yes, it is a delicious sake!
