The restaurant does not seem to be a sake store, but the lineup always draws me in. This time, I ordered "SENKOURI" and this was the sake I ordered. Fresh! But almost no acidity. Shigaizumi Ippodo Nitroku Special Junmai Unfiltered Nama-shu 720ml Rice polishing ratio : 58 Alcohol content: 15%. We drank it last year and enjoyed it so much that we brought it back from Ikusakaya for the 2007.4 production. It has a gentle taste and relaxes you when you drink it. It is fresh and fruity, but it is a delicious sake that gently permeates the body. We paired it with Hida's famous chicken 😋.

It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness.
