To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. The Yaezakura sake I had previously received from Izumikin Shuzo had a similar freshness. Yaezakura was impressive for its acidity and sharpness, while Soten was simply sweet and refreshing.
