This is the 38th sake brewery in Gifu Prefecture. This is one of the main brands of the Sugihara Sake Brewery in Ono-cho, Ibi-gun, which is famous for being the smallest sake brewery in Japan. It is sold at Tomikuya, the brewery's direct sales store, along with sakekasu (sake lees). It is also sold at a nearby roadside station in Ono-cho. The aroma is strawberry-like. It is filtered, but not excessively, so there is some lees floating on the surface. The palate has a weak acidity and the sweetness of the rice comes out well. It is a delicious sake with a long lingering aftertaste. Sugihara Shuzo is famous for its sake, but the brewery does not sell it, and there are only two stores in Gifu Prefecture that carry it, both by lottery, so getting it is a matter of luck. I would like to try it sometime.

Memorandum. This is another favorite local drink. Summer, After having accomplished a lot of big challenges in June for me. I wanted to take a breather and reset. A crisp, dry, unpasteurized sake. It works well. I should be able to get eggplant. It was such a good sake for the evening. Sasanishiki from Ichihasama. Suki. I prefer the green hode nasu in winter, though.

It is a local sake, but I first heard about it through "Sake-no-wa" and bought it at a sake store in the northern part of the prefecture. My daughter bought it at Fujiwaraya in Sendai Station a couple of times before she got married. Strangely enough, I could not remember any other person's sake. It has a fruity aroma and taste like peaches, with a nice sharp aftertaste. (Mrs. Fujinami's impression) It was too rich for me and I did not understand it well. It became easier to drink when I tried it on the rocks.

Summer version of hode nasu 🍆. First time I've ever purchased summer ✨. It's completely different from the winter version, crispy 😳 almost no acidity! I prepared a steak with the winter flavor, but I ate it with yesterday's leftover mansaku and ate the hode nasu with edamame and cucumbers 😅. Hode nasu in summer is more like sushi or pickles than meat 🤔.

This Sake has a full mouth feel and some sweetness at the beginning. The flavor of this Sake is bigger than other Seitoku Sake but it still has good balance. Very good with big flavor foods like mapo tofu.

This Sake is light, refreshing and easy to drink. I am revisiting this Sake because it has been a while since I last drank it. I enjoy the mild flavors of apple and melon with a clean, short aftertaste. This is a refreshing and well balanced Sake.

I saw a lot of Shuyoshi's La Chante at a souvenir shop in Akita. It was stored at room temperature in the sun, so I bought the one from the liquor store's refrigerator. Purchased at the Shinsaibashi Takashimaya Department Store on the recommendation of a store clerk. Rice used is unknown. The richness of the original sake can be felt. It does not have much of a nama-zake character, and is clear and clean through the throat, making it a sake that you will never get tired of drinking. Because of its name, I had always assumed it was a sake from Kyoto. I️ was surprised to learn that it was the first Japanese sake to win the Monde Selection gold medal, and that Wakayama is proud of this world-class sake. My sincere apologies 🙏.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

Hiduyoshi received as a souvenir from a New Year's party I have an image that Hideshiyoshi tastes better a few days after opening the bottle, and this one is no exception! It tasted hard and so-so right after opening the bottle, but after 3-4 days, the impression changed completely. From the flat taste of the past, a clear acidity has opened up along with a savoriness that comes in a jolt, and the dry base has been covered by the savoriness and acidity.
