Following yesterday's three-drink comparison. Yesterday I couldn't tell, but it was actually cloudy 😆. The aroma is still the same, like a gorgeous muscat. What was that? Yesterday I don't remember feeling so much sourness yesterday. It feels gassy and sour rather than sweet and sour. Maybe it was sinking with the cage? I'm learning a lot.

A light, umami-kuchi sake. It is lighter than regular fire-aged junmai sake. Overall, it is mild and this is also light and fresh. Elegant in the best sense of the word. Definitely delicious, but I prefer the fire-aged version!

Delicious! I feel like I should keep this one to myself. It's just as described on the label. Lightly cloudy and a little sweet and sour. I drank it on the second day after opening the bottle, but I think it is best right after opening.

We are past Obon and the summer sake continues. Today, we opened a bottle of early spring summer bourroux. This sake is made by Hayakawa Shuzo, which is famous for Tamitsu, but we have no experience with either Hayaharu or Tamitsu, so this summer bourroux is a new one for us. As stated on the back label, bourroux is a cloudy sake, and when poured into a glass, it was slightly cloudy white. The aroma is strong, and from the moment the bottle is opened, a fruity and fresh aroma with a hint of sweetness wafts through the air. The main flavors are sweetness and acidity, with a pleasant bitterness that keeps the overall taste tight. It is not a light summer sake, but rather a voluminous sake with a solid volume. The aroma and taste of this sake have a unique nuance, but it was not the first time I had experienced it, so I was drinking it from memory. After a while, I came across amayadori by Kawatake Brewery, also from Mie Prefecture. The specifications and specific name are different, and I felt a similarity, not in the taste or aroma itself, but in the nuance (≒flavor?). I found that they are both brewed in Mie Prefecture. I found out that both breweries use Mie yeast, which was developed in Mie Prefecture, so I guess that might be the reason for the similarity. By the way, I really like the classy and understated label of this summer's Boulud.

1848 2024/8 Early Spring Junmai Namaishu 60% 15° 24/7 A Mie Komono-cho Hayakawa Shuzo 1800 2860 The first sip reminded me of Tamitsu with a slight astringency and bitterness on the back palate, but after the second day it becomes milder. Overall, it is soft, elegant and light, but also a bit lacking.

The aroma is mild. When you drink it, a fresh, fruity aroma and a mellow flavor coexist. The taste is thick and sweet. The classic spiciness comes next and tightens up. The sweetness quickly fades away, leaving a dry aftertaste. Serve with the famous jumbo Negimato. Taste 3.5/5 Kinshicho Kaizoku

At a friend's house. First, let's start with the summer sake I was interested in, Summer Boulud: 🏝️ It's a nigori sake with a firm sweet and sour to crispiness that makes it easy to drink lol. It was really tasty!

I was at my favorite liquor store and saw a bottle of Hayakawa Sake Brewery's Early Spring, which is brewed with Tamitsu, in stock today. Hayakawa Shuzo's Early Spring, which is brewed by Hayakawa Brewery, was available at my favorite liquor store today, so I immediately bought it and opened the bottle. Fruity taste with malic acid! This is delicious!
