This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. It is sweet at the beginning, but the sweetness and umami come in the second half of the bottle. I have to admit that I've only seen Hyo Hyohi at department store events. Apparently, the brewery that makes the sake is in Awa City, which is different from the address on the label.
