It was purchased at the Yukiguni Shuho Kanazawa-ya Sake Shop and was fire-aged in August 2021. It was a bottle that had been sitting in the refrigerator.
It is brewed with Hachitan-nishiki grown under contract with four farmers in Kakizaki, Joetsu City, and sold year-round.
Polishing ratio is 55%.
Alcohol level is 15 degrees Celsius.
Sake degree is +3 and slightly dry.
Hachitan-Nishiki is a sake rice that has both a rich and crisp flavor. It is said to have an aroma that sometimes reminds one of green grass.
When opened, the aroma is fresh and elegant, with no hint of sweetness.
When poured into the sake cup, it is smooth and has a slightly yellowish flavor.
Taking a sip, it is smooth on the palate, with a light, dry taste spreading through the mouth with a slight sourness, but there is a lingering aftertaste with richness and gorgeousness at the back.
It is a little dry, which is my recent favorite, and it is a good bottle to be served well chilled.

I was curious about this local sake from Kakizaki, Joetsu City.
It seems to be a summer sake, but it is a very tasty one with a refreshing acidity like grapefruit and a clear sweetness.
The label is also fashionable and would be a good choice for beginners. 🙆♂️

Although the aroma has some sake-like characteristics, it has a mellow mouthfeel, acidity, fruity, slightly sweet and umami, and a deep flavor that is a whole lot. It has a very strong throat feeling. The taste may be different when it is freshly made. I would like to visit Kimura Sake Brewery in Higashinari-ku someday.
I missed out on buying it at the Niigata Sake-no-jin OSAKA, and there are not many mail-order stores that carry it, so I ordered it because the one I had registered as my favorite was running low.
I ordered some alcohol to thank friends and acquaintances, but bought some for myself to dilute the shipping costs.
First up was a Junmai sake from Koshiji-no-Kenbai. The label made it look really delicious.
The day I opened the bottle, it was slightly fizzy and aromatic with a very fine taste.
Like a sweet champagne.
On the second day, it calmed down and tasted a bit better than the sake I usually drink. I enjoyed it at a level that was a little tastier than the sake I usually drink.
(richer than the usual sake grade).

Sake rice is Gohyakumangoku from Niigata Prefecture.
The rice is 60% polished rice.
Slightly gassy when the bottle is opened.

Classic delicious taste, came out at room temperature. Probably tastes good chilled. Slightly dry. Mellow sake.
We had it at Niigata Sammai Koshinokura Yukikuni Shoten @ KITTE Osaka.
Daiginjo and Kubiki Wakimizu are also sold at the store, and I stocked up on Kubiki, a fire-brewed sake, which is not easily found in Osaka. I stocked up on some fire-brewed sake, which is not easy to find in Osaka, and I had to reduce the amount of fire-brewed sake.
I don't have a picture, but I tried Bon Sensei and Dragon Water at HOKURIKU+ on the same floor, and they were also delicious. I think Fukui sake breweries are very good at using Gohyakumangoku.
The third sake of the sake camp is Koshiji no Koubai. In fact, this is a brand that I have been wondering whether to buy or not every year after tasting it. This time, I did buy it (teehee).
The mouthfeel is refreshing. The lingering aftertaste after the umami is pleasant. I really think it is a good sake.
