Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

Almost no aroma 🤔In the mouth, it is fire-brewed but the sensation of freshness fills the mouth. It's a good combination of matured and fresh 😚😊Mellow and calm with a good umami and a crisp acidity 😋. I don't know if it is suitable for today's suddenly cooler weather, but it was delicious . I don't know, but it was delicious 🥳.

Purchased at the Chiba Prefecture Antenna Shop, which was open for a limited time at Hankyu Umeda Station. Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.
