Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

Started work today. Fukushima Prefecture, Kawanuma-gun. Toyokuni Sake Brewing Co. Toyokuni Tokubetsu Junmai Yamadanishiki Nama-Nagara Sake Toyokuni is famous for its "Ippou-self" (Higashi) from Ishikawa County, and Toyokuni from Aizu, Kawanuma County, where we will drink this time. I found out that there are two Toyokuni Shuzo Goshi companies with the same name. The brewer here told me that they no longer have to indicate the year of production. He told me that this brewery is identified by its own production number, NP-23C, where NP is not known, but 23 is the year 2023, and C is March, since the months go up alphabetically from A to January. I bought a bottle of March released Nama sake in November 😁. I drink it cold. The color is light for an aged sake, just enough yellow to be discernible. The aroma is sweet and mature, like burnt caramel. It also has a honey-like flavor. The mouthfeel is surprisingly light, and the flavor has the extremes of sweetness and nuttiness that are typical of a matured wine. After swallowing, the matured aroma lingering in the nose expands and the concentrated sweet and delicious taste increases. A bit of sourness at the end. It has the juiciness and depth of a pure sake, and is rich, mellow, and delicious. This is also our first time to visit this brewery. I'm glad to see that they have a lot of unpasteurized sake. I completely forgot about the bad things at work and went into drinking mode. Almost no aroma 🤔In the mouth, it is fire-brewed but the sensation of freshness fills the mouth. It's a good combination of matured and fresh 😚😊Mellow and calm with a good umami and a crisp acidity 😋. I don't know if it is suitable for today's suddenly cooler weather, but it was delicious . After buying some sake at Sukumasa, we left the store and were greeted with rain and winds like we've never experienced before. I thought to myself, "This is a typhoon," but my umbrella was overturned and my shoes and pants were soaking wet💦. If only I had bothered a little more at Sukumasa, maybe I wouldn't have gotten wet 🤣. Moved to Namba and went to Takashimaya while watching the liquor section of Ikari supermarket. MURASHIGE SHUZO who brought a strange sake that was dry but sour at last year's Takashimaya Sake Festival! I heard that the perverted sake was sold out, so the main sake was Kinkan Kuromatsu. We drank Junmai Daiginjo It is labeled as -8 on the sake meter, but it has a classic taste with not so much sweetness. It tastes not like a daiginjo and is very unique. It looks good heated up. A little nutty? Junmai I heard it's a sake for evening drinking, but it has a lot of acidity. This is also a classic, but it has acidity and is easy to drink. Junmai Ginjo Less acidic than Junmai. The most orthodox, but not memorable. Junmai Daiginjo Nishiki Beautiful taste, but less flamboyant. I also tasted a 1 year old junmai from MURASHIGE and 3 types of EIGHT KOTT, and bought the test brew of EIGHT KOTT because it was delicious 😋. Finally, I stopped by the sake department of EDION and went home 😊.

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. Kansai Sake-no-wa Year-End Party 2024⑦ Sake brought by me. According to bouken-san's information, the brewer of this sake brewery in Mie passed away suddenly and Sawasa Shuzo went out of business. The information is only based on fragments of information, and there is no proof. Currently, the website remains, but the online store is closed. I'm thinking of having a series of "can't-drink-twice" sake for the annual off-line meeting, but other people also brought a lot of "can't-drink-twice" sake 🤣. Sangu INPREVUE Anprevue Junmai Ginjo Sake - 40 degrees, slightly fruity, a mix of rich sweetness as well as rich sourness, not like a noble wine or ice wine where the sweetness stands out, but a rich sweet and sour taste. I thought this was delicious and interesting, but it's a shame we won't be able to drink this kind of alcohol anymore 😭 Thank you Sawasa Sake Brewery for the treat 🙏.
