Kashima Shrine, Ikisu Shrine, Katori Shrine I visited and bought from the three shrines of Eastern Japan! This time we got Katori! Junmai Natural Sake 80 I've never tasted sake like this before! Sweet aroma? The aroma of bread? The taste is strong and robust. The sourness and richness are similar to coffee... That's just my personal opinion😜. What the heck, I just finished 300mls! LOL! It is a divine drink 😁.

Although Nada-Gogo is located nearby, I had urgent business in the "Yodo ‼️" area of Kyoto, so I urgently set the nearby Fushimi area as the first district for the sake exploration trip 😊. As one would expect from a sake brewery. Everywhere you look in the city, sake signs abound. We decided to attack the local shopping district first. We visited a small liquor store just before the shopping street and, armed with the first-hand knowledge we gained from Chat GPT, the sake tour got underway👍. It is a small little liquor store in town, but the store was filled almost entirely with local sake. The owner, Obasama, was very knowledgeable and carefully shared her knowledge with us amateurs in a way that we could chew on it. 😊 We were looking for Sawaya Matsumoto, but it seems that the number of stores that can sell it is limited, so we were given an alternative. The alternative might not have the best image, but it was mellow, refreshing, and delicious. It was a good sake that was easy to drink👍 As a side note, they also sold a small amount of a wide variety of sake lees. I was told that freshly pressed sake called "Gohyakumangoku" was in stock that day, so I bought it as well. When I made sake lees soup later that day, it was so elegant and creamy that I wondered what I had done with the sake lees I had bought at the supermarket. This is one of the bottles that was sold in a set with Tobiroki at Hasegawa sake shop, it was made in October 2020, so I guess they used Tobiroki to clear this stock 😅. I'm not a big fan of the Satsuma Masamune, but I'm not a big fan of the Tobiroki either. I was a bit worried because it's a raw stored sake, almost a year after production, but there were no quality issues 😄. Rather, I didn't feel the peculiarity that I felt when I drank Junmai Ginjo before, and it tastes better than that time 🌟. It has a slight sweetness, a strong alcohol feeling and a spiciness that comes down the throat, not very distinctive but enough for everyday drinking. Cold sake is the best 😚

Home drinking. 100% Yamadanishiki produced in Shiga Prefecture The color is slightly whitish. The mouthfeel is clean and mild. The taste is sweet like green apple. The acidity is blended with sweet and sour. Is it sweet? Is it sweet? But then the sourness appears and has a big impact 🤩. The aftertaste has the umami of the rice, which is even more pronounced when combined with the acidity. I felt that the hint of aroma also penetrated through. By not being too sweet, the acidity and fragrance were also well perceived, allowing me to enjoy a mellow and refreshing sake 😊.

This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.

Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇
