Purchased at Yokohama Takashimaya Rice used is Kame-no-o type Koshihikari produced in Kasama City The alcohol is a little strong, but the taste is smooth and not like an unfiltered draft. It has a good balance of sweetness and bitterness and is refreshingly clean❣️. There aren't many unfiltered sake that are good all-around food sake, but this one seems to go well with all kinds of food❣️.

Cold sake. Sake from Japan's oldest sake brewery. The color is a cloudy light yellow. The aroma is faintly of cooked rice with a hint of myrin. The first sip has a mild aroma of cooked rice with a honey-like sweetness. The aftertaste is crisp and light, leaving a dry aftertaste on the tongue. Although it is a sake made from the traditional sake yeast, it is a pure rice daiginjo that is stored unfiltered, so it is easy to drink and has a beautiful taste with a broad range of flavors. I think it's rare to find unfiltered raw ginjo 🤔. Slightly sweet and nutty. It has a strong sweetness and umami. It's a good combination of modern and classic without feeling like it's been alkaloosoaked. If the label is a little more modern, it will sell well. After 10 days, it became bitter and hard to drink.

Tonight, a little early in the evening & first in the series, a Fukunoka Yamahai Jungin Nakakkumi Unfiltered Nama from Kunigon ✨. The aroma is mild cucumber, melon 🍈 The taste has just the right amount of rice and honey-like sweetness, followed by a layer of acidity and spiciness that makes it very easy to drink and I love it 😋😋😋😋.

Koshino-Hachiho Junmai Sake This is also a brand new to me! It is a light and dry sake with the main flavor of rice. It is a typical food sake that does not interfere with the taste of the meal.

Niigata Sake no Jin OSAKA⑰ The booth of [Koshinohatoyo]. I had drunk it before, but at the time, I only had the impression that it was labeled with a family crest of Rokubun Sen. The sake was -5 on the sake meter. Originally, they sold a dry sake and a sweet sake, but the sweet sake was said to be too sweet, so they made this sake. It has a moderate sweetness, a complex bitterness in the aftertaste, and a sharp convergence from a slightly nutty taste. Sake: Sake with a Sake meter of -10. Sake meter rating -10, not sticky sweet, but clear sweet. It doesn't feel that sweet to me, but I guess that's just a matter of the temperature range. Koshinohatoyo Junmai Genshu. The umami taste is felt and then there is a bitter bitterness, and from the aroma that passes through the nose, the richness of the rice flavor. It has the sense of sake at the beginning. Niigata Sake no Jin OSAKA⑯ Echigo Sake Brewery of the Ozeki Group is a little-known sake brewery. I saw this one at a store I sometimes visit and have been curious about it for a long time. I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture. The label is very cool. The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations. The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔. I opened it for 2 days and drank it.... It has some kind of sweetness, and it's indescribably rich and delicious 😳. This is what I mean when I say that the taste opens up. It's not for everyone by any means, but I thought it was a good sake with a sense of the creator's commitment. Thank you for the treat 🙏.

This is also a 3-day record. Chiebijin was not enough, so I threw in a small bottle. This is the pink label of Yatsuka, which I have come to like! It feels more rounded than Chiebijin. Delicious!

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

My first time at Hanaizumi. And nigori sake! This season, there are a variety of nigori sake, which is very enjoyable. First, the top clear sake. It is moderately sour. After stirring it, it becomes more rounded. The texture is silky (is that the right word?). The glutinous rice is not perceived, though I like rice cakes. I like rice cakes, but I think it's dry. I want to eat Karami rice cake.
