This is my first New Year's Day back in my hometown Osaka. This year, my parents invited us to their department store Osechi. My sister and her husband brought me a bottle of Okutanba as a celebratory sake. You can feel the sweetness of the rice in the beginning, but it changes to a dry taste in the middle to the end. It is a perfect match for the richly flavored Osechi and fatty yellowtail sashimi. It is said that the sake degree is +5 (dry), but I feel that it is +2~3 (slightly dry?). I guess. Anyway, it was a delicious sake. Thanks to my sister and her husband!

The sake my sister and her husband served me at New Year's was so good that I decided to pick up another brand from the same brewery. Okutanba Junmai Ginjo. This is Yamana Shuzo's regular sake. As stated on the label, the brewery has a long history, having been founded in Kyoho. The Edo period (^_^;) is amazing. It was my wife's fourth birthday today. I really wanted to go out to eat, but the situation was such that we had a takeout party at a yakitori restaurant and drank at home. Thank you for your continued support. I had a cold glass of sake. Oh, dry? It's been a while since I've had a dry, crisp sake. Even though it's light and refreshing, you can still feel the taste of the rice right after you put it in your mouth. At the same time, there is a sense of alcohol, but the aftertaste is short, so it gives a refreshing impression. According to the brewery's website, it has a sake strength of +1. ＋Hmm? +1? It's not dry, is it? Once again, I realized that the accuracy of my tongue sensor is disappointing (tears). Well, everyone has their own way of feeling.

I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

From the jacket, I thought it would be a light, dry, smooth and elegant type 🤔. When I drank it, I found it to be medium dry with a solid richness and flavor... 😋 I felt like we suddenly became friends🎶. Sauteed peppers with salted kelp (salted kelp flavor), turban shells in a jar, goes well with a variety of Japanese food😻 It's also a great gift 👍✨.

I was curious why it says sweet on purpose😅. It's not like the popular fluffy fluty It's a solid sweet sake 👘. So, you know... It was great with light red bean paste sweets, cheese, teriyaki, etc 🎵. Recommended to drink at room temperature or lukewarm, but it was also possible to drink it a little chilled 👍✨.

5/10 Canned sake from Shotoku Shuzo. Kyoto has an image of an increasing number of these. Kyo-no-kiraki is Kyoto's original sake brewing rice and is used only in Kyoto. The taste is quite dry. The aroma is also subdued, which is probably due to the fact that it is hard to sense in the can. It has a sharp taste, so it is a good sake to accompany sake snacks.

My favorite Chiba sake "Iwanoi" is brewed with ultra-hard water (hardness 240). It has the delicious flavor of Omachi and the moderate bitterness and sharpness of hard water! I bought this at AEON Liquor when I went to AEON Katsuragawa with a friend. I was looking for something unusual for the parking fee 😁. I've had Fudo before, but this is the first time I've had Niiyu. It has a honey-like aroma. The flavor is beautiful and gorgeous, but it's a bit too refreshing for an unfiltered, unpasteurized sake. I would like a little more umami... I think it has a lot of rice flavor 🤔.

Good evening, first series here 💁 from Niiyu. Also known as Fudo Toi brand, this is a test brew of Niiyu's frog series 🐸🐸🐸🐸🐸 Rice is undisclosed🍶. I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. The sweetness, spiciness, and astringency of the flavor are all present as soon as the lid is opened! Although it is a junmai ginjo, it has such a robust flavor that it may be served warm. The overtone is similar to that of "Shinkame" and gives the impression of a matured sake. The lingering aftertaste is well rounded as it quickly fades away.
