I've been curious about Re:vive Kuga from Heiroku Brewery, but I've never had it before. I drank "layer" but this is my first time to try "Re:vive". I wanted to make sake, but I don't have a sake license, so I mixed germinated brown rice with sake and made it as a craft sake. (Brown rice is considered rice and is sake, germinated brown rice is craft sake, I didn't know that 🧐) Gentle sweetness, moderate acidity. Fresh and delicious 😋. Not schwashy, but fresh? Beautiful and tasty, but maybe it's my imagination, a bit subtly different from so called sake? (Can't describe it 🤣) Well, it's good because it tastes good 😆. It's the kind of thing that goes down smoothly.

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Local brand of Kamogane. It is al-soke and has no label on it, so is it a regular sake? The taste is clearly superior to the ginjo class, with a touch of sweetness and a refreshing feeling. I wonder if it is just not labeled. Since it was purchased from a supermarket in Fukuyama, I did not expect such a high level of quality, but I was surprised! Delicious, highly recommended.

The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens 😆. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.
