At the return home. Junmai sake from a local brewery, Takai Shuzo's "Koshinohatsubai". A rare and true gem among spring wild plants, Ki no Mame. It is served with the yolk of an egg. It is a sprout of akebi, and its bitterness and the breath of spring are irresistible. Local shiitake mushrooms are also available. The light and refreshing local sake goes well with this dish, and it is blissful.

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Tonight I'm opening a bottle of Sakurafukietsu🌸... a jun-dai (pure) draft sake from Kanemitsu Shuzo🍶, a local brand in our area. Kanemitsu Shuzo is a well-known brewer of Kamo Kanehide, which many people like... but they don't ship their Sakurafukietsu series outside of the prefecture? I've only seen it in my hometown or suburbs😅. Actually, this morning... I went to buy the Kamo Kanehide sake that is only available at the direct sales outlet... but I didn't expect it to be sold out 😨 I got the notice on line on Monday... I didn't expect the 120 bottle limited edition to be sold out on a weekday... 😂... 😂. I was shocked, but I bought it immediately 😨! I was shocked and bought it immediately 🤭 lol Well...I'll open it now that I've been preaching for so long: ‼️ Gorgeous apple🍎 strawberry🍓 pear🍐...fruity aroma🤤. The mouthfeel is quite light and easy to drink 👌Among them, the piquancy derived from the raw sake? The taste is quite light and easy to drink 👌and you can feel a hint of pithiness 🫧 from the raw sake in the middle of it. Delicious... 😋. It is really excellent that there is no bitterness or other unpleasant taste in the aftertaste 🥺. But...because I like it, I wonder where is the distinction between Kamo Kanehide and Sakurafukiyuki brewed by Kanemitsu Shuzo 😅. After all, they are both delicious and have a similar taste 💧. Well, I'm not complaining because they are generally delicious 😓.

This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. At home. Nara Sake without permission, 12th stage ~‼️ Kubo Honke, a long-established sake brewery in Uda City, Nara Prefecture ~ ‼️ Hatsukasumi and this Soriryu are famous brands. The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. We used to pass by the brewery we visited this time, but this is the first time we visited there. It is called "Sake Brewery Street," but it is really a quiet street. And the taste of the sake.... There is not much aroma, and although you can feel the alcohol in your mouth, the dryness is not so high and the sake is easy to drink. I imagined it would be a dry sake for the experts because it is from a long-established sake brewery, but to my surprise, it is moderately drunk and has a refreshing taste. It is not flashy, but it is a good sake. ‼️

I bought this sake in Shimane because of the impact of the label. It has an amber color with a sense of maturity typical of San'in sake. It does not have much sweetness, but has a rich acidity and rich umami flavor. Personally, I found it softer and tastier when heated than when cold.
