But you have to be careful with active nigori or second fermentation sake in the bottle, because of the second fermentation in the intestines the next day...(sweat).

Dark niggles with visible truffles.
Milky juicy rice juice~! Punchy rice flavor!
Strong rich umami flavor.
The sweetness is soft and thick, but not clingy, probably due to the acidity.
It is a very drinkable yet smooth drink,
You will want to drink it in large gulps,
The alcohol content is a little high, so you can't be too careful (laugh).
4/5 stars for my taste.

I bought this sake because it was recommended at the Niigata antenna store in KITTE at Osaka Station.
The first mouthfeel is full of the sweetness and depth of rice.
The taste gradually becomes firm and dry, and then fades away.
It was as youthful and powerful as the comment!

So, the fifth sake at Parking Kitahama Fermentation Plant is from a new brewery, Ayumasamune Shuzo!
This time, it's ayu-agari!
Let's have it right away!
First, the aroma. Not much of an aroma.
In the mouth, you can taste bitterness, richness, and a bit of fruity flavor.
After that, there is a complex taste and a lingering pungent aftertaste that gives the impression of being rather dry, but what can I say, it is delicious!
Is it just drunkenness?
I'm a little hungry, so I thought I'd have some risotto.
The waitress told me I could get a great deal on a set of drinks, so I ordered a beer for lunch on a weekday!
I'm sure the waitress was recommending something café-like,,,because it was a very stylish restaurant...

Sweet and fruity aroma

The sweetness is not as strong as the aroma
It is mild and moist with a delicious acidity 😋.

After participating in the Echigo-Kenshin SAKE Festival 2025, 11 people joined a drinking party at Gun-chan Naoetsu near where they were staying at night. The all-you-can-drink sake was Hakkaisan, Kubota, and Ayu Masamune.
I wonder how much I have to drink to get through this 😅.
Two of the Tokyo group were also in the party until the last minute the next day 🍶.
We said goodbye to everyone and hope to see you in Joetsu next year 😄.
