First, the aroma. Not much of an aroma.
In the mouth, you can taste bitterness, richness, and a bit of fruity flavor.
After that, there is a complex taste and a lingering pungent aftertaste that gives the impression of being rather dry, but what can I say, it is delicious!

The sweetness is not as strong as the aroma
It is mild and moist with a delicious acidity 😋.

After participating in the Echigo-Kenshin SAKE Festival 2025, 11 people joined a drinking party at Gun-chan Naoetsu near where they were staying at night. The all-you-can-drink sake was Hakkaisan, Kubota, and Ayu Masamune.
I wonder how much I have to drink to get through this 😅.
Two of the Tokyo group were also in the party until the last minute the next day 🍶.

It's a Niigata-like junmai that I don't drink much these days, but it became a little milder after the second cup of inoguchi and a little sweeter in the third cup.

It's the usual Ayu Masamune 🐟.
I even went to the brewery so I can reminisce about what a nice place it was when I drank every single one of them 😆.
This one has a sweet taste and it goes down easy 🍶.
The taste is calm, full-bodied, and lightly sweet. The bitterness that lingers on the palate at the end is also good. It goes well with foods that have a strong umami flavor! It went perfectly with shishamo (smelt)!

Near Niigata Station: I compared three kinds of sake at Benkei's crying place. The sweetness and umami are well-balanced and pleasantly spread in the mouth.
