I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

I heard that it is a very good choice for those who want to drink a little bit sweet and a little bit tangy. I had to try it! I bought it in a hurry: ‼️ After returning home, I opened the bottle slowly, little by little. The white ooze that had accumulated at the bottom of the bottle danced and danced like snow every time air entered the bottle. Dancing. Dancing. The first nigori sake in my life. It is a delicious and dangerous sake that can be drunk smoothly with a shwashy taste. I wish they would release it all year round. I will definitely buy it again next year.

Many people reviewed the Echigo Kenshin SAKE Festival held last month, and a friend of mine who attended the festival bought the sake that I was visually overwhelmed by 🎶Thank you so much 🎶. I've never seen such artistic ❔ labels here, so why the camouflage... ❔? I think it's a rather typical Niigata Nama sake, but it's very smooth and elegant without being angular, while still being slightly effervescent and rough ✨. The sweetness is very Joetsu-like and the banana-like fruitiness is pleasant 😌. But I'm still curious about the concept of the label... why a white sweetfish on a camouflaged water surface ❔🫨?

The rice used is Gohyakumangoku and Yukinosei. Yuki no Sei is the grandson of Koshihikari and is said to be the best for sushi rice. It has a slightly sweet taste with a slightly spicy aftertaste. It is more suitable for grilled fish than for sushi.

Echigo Kenshin SAKE Festival Limited Edition Ayu Masamune Unfiltered Junmai Nama Sake Pressed on October 15, 2024 Rice polishing ratio 65 Alcohol content 16.5 It was the easiest to drink at the tasting. It was very popular with the camouflage at the event. I thought about quitting for a moment, but was told that it was okay for a day or two because it was not summer and I could drink it. We opened the bottle early on Tuesday. It was fresh, but a little different from Saturday. I guess there is a difference between tasting and drinking it slowly.

Echigo-Kenshin SAKE Festival 2024④. Ayu Masamune. I think there was a new sake tasting, but I don't have a picture of it. The second camouflage pattern was the easiest to drink and I bought it in the second week after I heard it was limited to the venue. ✌️ The brewery is located in Myoko City.
