At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

The last one is Fusozuru. It will be served warm. The top-tasting aroma is that of thick rice. The mouthfeel is clear and the umami of rice is directly conveyed. Purchased at the Takashimaya Sake Festival. The one that impressed me the most after tasting several kinds of Kunihiki. It is sweet and fruity. It has a sourness like citrus. 288 Nights Junmai Ginjo Tamakashiwa 100% Gohyakumangoku produced in Niigata Prefecture Polishing ratio 50%. Alcohol content 16%. Sake meter degree: +3.8, Acidity: 1.5 (reference) Fat: 7/25 (bottle opened 8/23) This sake won the Platinum Award in France in 2018, and I tasted and bought it during my business trip to Nagoya on 7/19! Origin of the name *From the label The name "Two Hundred Eighty-eight Nights" comes from the fact that it took Mr. Takakura 288 days from rice growing to sake brewing in 1999, and Mr. Uno, who inherited his will, brewed it faithfully according to his teachings. I didn't notice any particular aroma after opening the bottle, but it had a refreshing-like feeling. The refreshing taste on the palate reminds me of a beautifully dressed young lady in summer clothes with a crisp and refreshing mouthfeel 😍. The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.
