Kawazawa Sake Brewery has been on my radar ever since I saw the news about the brewery's birth.
The brewery owner's son? An elementary school boy was going around handing out flyers 😊.
Seeing something like this makes me want to support them🤗.

Clouds on the mountain Zaagusaag Special Junmai
Gohyakumangoku, 60% polished rice
I got the impression that it was a dry sake with a good sweetness and umami.
Yama ni Kumo no Karara Karara Junmai Daiginjo
Gin no Yume 50% polished rice
The aroma is sweet.
It is sweet and fruity. The acidity is fruit-like.
Low alcohol content, light and easy to drink.
Expect to find it in the antenna store at KITTE.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑭
The booth of "Clouds in the Mountains" in Kochi.
This is the newest brewery in Kochi, established in 2024 by Takahisa Kawazawa, the toji (master brewer) of Kameizumi Sake Brewery.
Yama ni Kumo no Karara Karara ◉Yaman ni Kumo Karara
The sake rice is Gin-no-Yume and the yeast is AA-41, which I had heard tends to give a banana taste, but this one has a sharp citrus acidity. It has a Junmai-shu character and is somewhat modern.
Clouds over Mt.
Sake rice is Gohyaku-Man and the yeast is AC95-80.
This one has a milder acidity and is more like a standard sake. Sharp standard.
