Sake that I bought as my souvenir when I visited Minamisanriku Town. It has a dry dry taste with (in my opinion) a good amount of miscellaneous flavors typical of junmai sake. You don't feel it as you keep drinking. I participated in a storytelling session about the tsunami damage in Minamisanriku Town. I couldn't believe that a 22-meter tsunami had hit a four-story building along the coast. Even though I actually visited the place, I could not help but feel it when I saw the now calm sea. Hearing about that time always brings tears to my eyes. Perhaps it is because I am from Tohoku. To what extent does "reconstruction" mean?

New ramen🍜 restaurant in the city: ✨️ I've had my eye on this place for a while but never got around to going 💦. Today, my family of three decided to definitely go ‼️ I had the delicious spicy chives soba🍜 and my partner had the black ramen🍜. My partner had the Black Ramen 🍜 and my daughter had the Aburan Chicken Set Meal 🍜. My daughter had the Aburinon Chicken Set Meal 🍚. It's a ramen shop with a wide variety of set meals 🎶. Mildly spicy and full of flavor ❣️ And plenty of chives 😁. The noodles are also my favorite watery and curly noodles. My family and I were very satisfied ( ¯﹀¯ ) I'm also interested in the "Mapo Ramen", so I'll go again.... I'll go there again....

Welcome Spring with Iga Sake (5) Iga Sake Fair this spring. The last one is a matured sake. Mie Nishiki's super-harsh junmai. First at room temperature. Pale gold in color. The top aroma is gently rounded, with an aged aroma reminiscent of fermented butter. From the slightly thickened mouthfeel, The mild ripeness of the mouthfeel The taste of rice is thick and round, The finish is capped off with acidity and bitterness, while leaving a lingering astringent taste and the umami of rice. The water content seems to have been adjusted, It is easy to drink, yet the thickness of the rice flavor can still be felt, which is typical of Mie Nishiki. When heated, the acidity and bitterness become more pronounced, and the richness of the creamy rice is more pronounced. Umu-umu-umu. Mie Nishiki is no longer brewed. I was happy to find it at the store. I was so happy to find it at the store! By the way, this Iga expedition. We ate Iga beef, and also enjoyed my favorite hot spring. First time I posted on Sake No Wake, Nekoma no Shizuku. Purchased again this year! Slightly fruity aroma. Fresh, sweet and light taste As I said, easy to drink and delicious 😋. This is the second of the three bottles I bought at the supermarket the other day. This is the first time I've had this brewery. I was wondering why there was only one bottle left at the store, but I was curious, and I was going to buy one bottle of Eikoh, but I picked it up. It's sweet but easy to drink ☺️.

Saga, Saga Prefecture, Japan. Saga Brewery Co. Umenomado Special Junmai 3㌥ I tasted and bought this at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. I actually had it yesterday, but since it is a special junmai, I compared the two. We will drink it cold. The color is clear and almost colorless. The top aroma is mild and not very noticeable. The taste has a robust rice flavor, sweetness, and a nutty, chocolate-like complexity. It is rich and mellow, but compared to Saka, it has a more traditional country-style flavor. The aroma on the nose is bitter and chocolatey. By the second day, the chocolaty flavor has settled down, and a clear, mineral, full flavor emerges, making it easier to drink. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15 to 16 degrees Celsius

Saga, Saga Prefecture, Japan. Saga Brewery Co. Saka Tokubetsu Junmai Nama Nama Zake. Purchased after tasting at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. Saka is a new brand, and is apparently better known as "Ume" (window plum). It is served cold. The color is clear with a slight yellowish tinge. The top aroma is mild, with a slight hint of alcohol. The mouthfeel is smooth with a slight flocculation, and it does not feel fresh to the extent that it should. On the palate, there is a little bit of juicy acidity, a little bit of tangy alcohol, and a nutty, full flavor that spreads. The aftertaste is a bit of a sharp spiciness, with a slight throat hit after swallowing. I bought it thinking it would be sweeter and more umami, but it was surprisingly dryer than I expected. Abeno Harukas Kintetsu Main Store Sake Expo 2025 SAKE EXPO① After receiving a reconnaissance mission from bouken, we first visited Saga Prefecture's Saka Sake Brewery. The brewer was an Italian. He speaks fluent Japanese. He used to be a language teacher in Japan, but was scouted by the brewery. ◯Saka Junmai Ginjo Nama It has a firm flavor and freshness. It has a chocolatey taste, but it is well balanced. The alcohol content is 17%. ◯Saka special junmai draft It is also full-bodied and fruity. ◯Mado no Ume Junmai Daiginjo Hananoi It is clear and has a slightly spicy but refreshing aftertaste. ◯Mado no Ume Junmai Ginjo It has a clear acidity and a slightly spicy aftertaste. ◯Mado no Ume Special Junmai According to the brewer, it is suitable for hot sake. It has a strong umami taste and is delicious. It is said that it goes well with soup stock dishes. There are many good brands of Saga sake that we don't know about.

This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

It was a gift from a junior colleague at work. I received it last year and remember that it had quite a punchy 🤜 flavor. It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. It's only 3 days old and it's getting sweeter and tastier 🙌 I got it in a bottle, so I'm thinking of trying some heated sake with ✖️ on the back label 🧐.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

Purchased at a liquor store in Hisayama-cho, Kasuya-gun (Just after opening the bottle) Drink cold Clear and colorless Mild aroma Fruity sweetness spreads in the mouth. The taste is sharp but not dry. The aftertaste is clear. It goes well with sakadaki (a dish made from fermented soybeans). When warmed up, it becomes more dry and cloying. (15 days after opening the bottle). Warm to lukewarm The sweet ginjo aroma, similar to that of fruit, becomes stronger. Taste as cold as it is. Very good with cod roe. To be heated Grain aroma similar to corn becomes stronger. Loses its sweetness and richness and becomes very light. Even when heated, it does not return to the same sweetness as cold or lukewarm sake, and has a light flavor.

The fourth one is Nechi-Osan. This is my first time to visit this brewery. I always thought it was "KONCHI". Sorry locals! The taste of rice is well expressed, but the overall taste is clean and dry. The aftertaste is a bit peculiar, but it is good in its own way. Thank you!

OSAKA SAKE&FOOD EXPO 2024⑳ Lastly, we went to the Komatsuya booth again. Nechi from Nechiozan, which is not seen very often. There were many different rice varieties, but we chose the Koshitanrei 1st class rice 2020. Nechi is only available at authorized dealers. It was easy to drink with a beautiful taste and a hint of sweetness. The review of this event was a bit of a mess, so please refer to Nechi's post later on 🤣.
